What's for dinner everyone?
What's for dinner tonight?

I am trying out a recipe for broccoli cheese soup. It's not a true plant based recipe, but I'm making it anyway.
It's a recipe from the back of a pioneer gravy mix package and I'm using real cheese in it as well.

I'm only making it cuz its easy and tonight I have a big "honey do" list to take care of.

How about everyone else?

It has been hot and I have been less hungry than usual--I've been having a bowl of Hi Lo cereal with blueberries and walnuts and plant milk--yummy

I batched lentils a few days ago and mixed up a few burgers so I had one of those and lots of broccoli.

Well, I got tired so I didn't make the soup.

I had tomato soup and a grilled spelt bread cheese sandwich. Not even close to being plant based, but I'm not giving up.

I got the Spelt bread at sprouts and its so good. I really like it.

Last night I finally made the broccoli soup from the gravy mix. It was okay, but I won't be making it again.

Tonight, I'm having vegetarian egg rolls, fried rice, and cabbage.
The vegetarian egg rolls are pre-made and they are very tasty.

Last night I had spaghetti squash with a jarred tomato sauce. With steamed broccoli. Slice fresh sour dough bread.

Tonight rice with collards..... love collard green :)

TJ's ww lavash spread with avocado mayo and stuffed with sautéed 'shrooms and vegies.

Hub had gyro meat.

We also had amazing ears of bicolored corn.

Cheese Enchiladas & Spanish Rice
Tonight I'm making cheese enchiladas and Spanish rice and guacamole for dinner. Not exactly plant based or whole grain, but I am giving into my cravings.

My wife is having chicken..lol..see, I knew that plant based thing wouldn't last with her. Carnivore. But I gotta love her. She actually told me yesterday that she was getting tired of bacon. I almost fell off my chair. She used to love bacon, bacon on everything. That's good news if she stops liking it.

I'm buying some Hampton Creek vegan mayo the next Walmart trip I make cuz online, it says they have it in my store. I figured at least I can incorporate that into my diet and its even a few cents cheaper than my beloved Hellmann's. You know who won't be a fan, but hey, first ya gotta lead the horse to the water.....at least I can furnish the water and the horse has a choice....lol

We .went to the fair this evening. I usually love the hypnotist but the one tonight seemed to be more about plugging his quit smoking and weight loss business.

Last year I laughed so hard I cried but not this year.

The hubs had fair food (not the giant serving of curly fries or fry bread), I had a Mediterranian salad which was pretty boring and it had raw mushrooms in it which seemed out of place. Oh well.

I bought a whole lot of mushrooms today and I plan to cook them all tomorrow then eat them all week. Avocado toast with 'shrooms sounds really good.

Homemade Pizza on the BBQ
Last night I made homemade pizzas on the bbq.
I bought the crusts, but made the sauce, etc.
It was the first time I cooked them on the grill....they turned out great, a little overdone, but still good. We also had salads with that.

Mine was jalapeno, mushroom, and black olives. The wife had pepperoni and mushroom.

I've had a bug for a couple days so not eating much.

Tonight I was finally able to eat dinner which was just a small sweet potato, broccoli, 'shrooms and some tahini sauce.

I'm not in love with sweet potatoes but occasionally they hit the spot. I'm looking forward to some winter squashes.

Last night I had green cauliflower..lol...I think its called broccauliflower but I can't be sure. Anyway, it was delicious.
I also had some MSF faux chicken wings with hot sauce and some mac n cheese. The mac 'n cheese was from a box, but I was tired last night.

Tonight I'm having bean and cheese chalupas and some Spanish rice.
The wife is having some lasagna that is in the freezer.

Good job clearing out the freezer. We had a small chest but no room so sold it then we bought a smaller chest, a square but same height. It will mainly be filled with blackberries and bags of lemon cubes.....and anything else that there is quantity of. By late spring it'll be turned off and cleaned.

The hub is having rotis chicken for dinner. I'm having a big salad sort of Greek/Med style.

I made homemade Heirloom Tomato Juice yesterday.
It was delicious. The tomatoes were starting to wrinkle a little, so I juiced them.

The other day, I made a mixed fruit juice thing and added a couple of roma tomatoes to it. I figured it would taste weird, but it didn't.

I don't know what to have for dinner tonight. I'm going produce shopping in a bit so maybe I'll get some ideas. I do better when I plan ahead, but this week, it just didn't happen.

Your salad sounds good, jem51. Maybe I'll have a big ole salad for dinner. I haven't had salad in a while.

Still summer here for sure. The smoke from the forest fires is horrendous! Air quality is the worst I've seen here in OR.

I was planning to make a curry with chickpeas, cauli and coconut milk but I might skip it and have a salad.

]I was oven-roasting roma tomatoes, and made up another tray of sliced mushrooms, peppers and onions to roast too and decided to have Dollar Store pizza tonight. The Dollar Store sells these very thin pizza crusts ($1) and a decent pizza sauce (Rinaldi's $1). I spread that sauce over the crust, topped with the mushroom mixture and some thin-sliced vegan cheese I had made, oh and thawed out and sliced up a frozen vegan sausage Aldi sold for a brief time, added some thin sliced green olives and baked away - served with a nice tossed salad and DH and I each had half of the pizza. Yum!

That pizza sounds good. I've been thinking of making it at home instead of going to MOD.

I just bought one of the big indoor/outdoor George Foreman grills and pizza is on my list of things to grill.

That pizza sounds good penguinpower. I have had those pizza crusts from the dollar tree and loved them. Too bad they hardly ever have them around here.

jem51, pizza on the grill is the bomb!! I made some a couple of weeks ago.
I'm getting my new gas grill tonight, so I'll be making more pizzas next week.

I generally buy the pizza crusts at super Walmart or HEB, unless I find them at the dollar tree. All of them are good. Once in a while, I even make them myself, but the store bought ones make pizza so fast and easy.

I haven't used a George Foreman grill for pizza, so I wanted to mention that, but the gas grill works great on pizza, so hopefully ole George will also. Please let us know how it turns out jem51.

Well the George Foreman worked well for hub's steak so I guess we'll recycle the packing material since I won't have to return it.

Tomorrow is the farmer's market so I'll pick up eggplant and zucchini to grill....and anything else that fits the bill.
I buy a big box of 'shrooms every week and saute them to use throughout the week. Too bad I didn't save any for the grill. Oh, well.

I'll check out the Dollar Tree for those crusts.

I made some black bean soup for dinner. I blended up a carrot/tahini/ginger dressing for my salad. Yum.

Nice to see you too, jem! I haven't been visiting boards much lately. Every once in a while I get anti-socialmedia lol.

Our Dollar Tree always has the crusts here, Nigel but it seems like they get a kick out of hiding them. Sometimes they're hanging up on one of those plastic strip things, in an area nowhere near where you'd expect them to be. Most times they are laying in the flat boxes and you don't see them unless you are really looking hard. Likewise with that pizza sauce. Last time I bought it, it was way down on the bottom shelf, in two rows at the very back of the shelf so you couldn't see them without bending low, and I literally had to kneel down to fish them out.

Tonight was an easy meal - leftover red beans and rice. I joined the Rancho Gordo bean club and am enjoying their heirloom beans so much! I wish we could buy the RG beans locally, but I've never found them anywhere except online.

Oh - those oven-roasted tomatoes I made yesterday, for lunch I made sandwiches with some of my homemade vegan cheese and those tomatoes and grilled them like paninis on the George Foreman. Delish!

PP, I know those little counter top GF grills are great for sandwiches. I sold my last one at a garage sale.

We went shopping in Eugene last week and visited all the natural food markets to find the best bulk bins and we hit the jackpot. This one place had so many organic beans and many that I've never tried. Great prices, too.

I'll be stocking up there every month and before heading back to CA.

penguin power, thanks for the tips about the pizza crusts. I just checked the dollar tree online and you can order them and have them shipped to your fave store, but you have to buy 12 at a time. I need to check our store first, but ordering them is a good option for me as well.
