Gluten doesn't 'impair' thyroid function, but many people in the US are hypothyroid due to Hashimoto's--which is an auto-immune disease. There is speculation that those with Hashi's have a 'sensitivity' to gluten--although they are usually not celiac. It's a 'correlation'--i.e., often Hashi's and gluten sensitivity co-exist--but there is no causal relationship. That is, eating gluten will not 'cause' hypothyroidism.
I have Hashi's, and while I don't abstain from gluten, I avoid all grains and processed food, so I doubt that I have much gluten (if any).
