Mushroom and Bean Sprout Soup
Mushroom and Bean Sprout Soup
Makes 1 large serving


2 cups Bean Sprouts, drained (1 can)
1/2 cup Shiitake Sliced Mushrooms (dried)(about 1/4oz)
2 cups Soup, Chicken Broth Or Bouillon
8 oz Tap Water
1 Raw Clove garlic, sliced
3 stalk Fresh GREEN ONIONS, sliced
1 tbsp Tamari Soy sauce (or coconut aminos)
salt and pepper to taste


Place the dried mushrooms, garlic and water in a saucepan and bring to a simmer. Cover and simmer very low for 15 minutes.
Remove the mushrooms and slice if needed.
Add the remaining ingredients and simmer fo5 5 minutes until heated through and the onions are slightly softened.
Taste and add salt and pepper to taste.

*Drain and rinse the canned sprouts if you want to lower the sodium. The recipe uses 1 can of La Choy brand bean sprouts.
