Mushroom stroganoff is all about the mushrooms and getting that flavor right then the creamy part is less important.

Worcestershire sauce is one ingredient that makes it but I think if you follow a traditional recipe with veg ingredients you'll get it right.

I make cream from raw cashews and tofu with plenty of lemon juice, a little ACV and a dusting of stevia.
I use it in place of yogurt/sour cream. I can taste the tofu a little straight up which is no biggie since I love tofu but when added to a recipe it really works well...BUT whatever cream you like will work, however, things like coconut yogurt are not good.
