This Soup is truly wonderful and only 2 Sp per cup.

Ham & Potato Soup...
Makes 8 servings at 2 Smart Points each
Ingredients...
4 cups peeled and chopped potatoes
1/2 cup chopped celery
1 cup chopped onion
10 ounces of cauliflower or 1/2 medium head chopped
4 cups Fat Free Chicken Broth
1/2 tsp salt to taste
1/4 tsp black pepper to taste
3/4 cup lean diced ham. I used farmland 94 percent FF diced ham

Instructions...
Combine the potatoes, celery, onions, cauliflower, broth, salt and pepper in a soup pot. Bring to boil, then cook over medium heat until potatoes are tender, about 10 - 15 min.

Puree part of the soup in a blender or with stick blender, to thicken it Stir in the ham,taste and add more salt if necessary add back in the pot with the remainder of the soup .

About 1 cup per serving. 2 Smart Points per serving.
