"Reuben Rolls"

For St Patricks day

Reuben Rolls

1 package, Buddig Corned Beef, chop it up
2 oz, Light Swiss Cheese, shredded
8 Tbsp., Sauerkraut, squeeze dry
3 Tbsp (37g), Thousand Island Fat Free Salad Dressing
6 wrapper, Eggroll Wrappers
Cooking spray

Preheat oven to 350f.
Spray a baking sheet lightly with cooking spray and set aside.

It's easier if you divide the ingredients into 6 piles before you start.
Lay a wrapper on a dry surface, place 1/6th of the ingredients down a long side and then roll once, with your fingers lightly dampen the 3 exposed ends with water, then tuck in the short ends and finish rolling.

Lay seam side down on the baking sheet and spritz the top with cooking spray.
(Sprinkle with a finishing or flake salt if you like).
Bake for 15 minutes, until they brown, then turn over and bake an additional 7-10 minutes to brown and crisp.

Makes 6 Reuben Rolls

I think, if you want to go GF, you might be able to use rice paper wrappers, but you'd need 2-3 per roll and that would increase the calories and carbs substantially.

Lovely Rueben Recipe

Dottie,
I used the Fantastic Flour Mix (Better than Flour)
and made a medium textured pancake then made
a thin pancake (aka crepe). They taste like a mild white
bread. I made grilled cheese sandwich and it turned out
great, then I made a tuna sandwich. I'm gonna make some
crepes with the recipe and use them for your Rueben sandwiches
and save some carbs. Will let you know.

The recipe is as follows:

Bread Cakes:
Place in Food Processor
2 eggs
1 1/4 c. water
1/3 c. heavy whipping cream
1 c. Better Than Flour mix
1/4 tsp. salt
1/8th tsp. baking powder
Whirl in processor until well mixed.
If too thick add a bit of water or too thin
add more baking mix.

I griddle them in rounds or oblongs to the size
I want for my sandwiches or wraps.

FOR PANCAKES ADD:
1 tsp. vanilla extract
1 pkg. sugar sub.

They came out very good. Love that Reuben!

I also found a minute recipe for 'bread for one'.
It made a nice size grilled ham and cheese sandwich.

Minute Bread For One
Small Bowl:
1 egg beaten
1 tbs. coconut flour or BTF
1 tbs. Parmesan cheese
1/8th tsp. soda
1/8th tsp. baking powder
(left out the salt)
Enough cream or milk to make a dough
Beat it up and let it sit awhile to thicken

Pour out into melted butter non-stick skillet
I made into oval shapes. Cook on one side until
golden brown, turn and cook lightly on other side.

Remove. Place bread light side down, 1 slice favorite cheese,
a couple slices of thin ham, the other side light side down.
Back to melted butter skillet. Place in and cook just until
cheese is melted. Turn and cook a little more.
