Knock off pasta and shrimp scampi
Heres a recipe that I like. Get a couple yellow summer squash. Cut them length wise about the with of an egg noodle but a tad thicker. Try not to cut your fingers off while doing this. Set them to the side.
Shell and devein fresh shrimp if available, frozen works. About a pound or so.
Fry up shrimp with a few pats of butter. Table spoon of jar garlic. Lemon pepper. Lemon juice just a touch 1/4 teaspoon. Fry on medium heat until color change. Don't Over Cook!
In the microwave put the squash in with a 1/4 cup if liquid that you like. Cook for 3 minutes covered. Check texture. Shoot for pasta texture.
Mix the shrimp and juices in with the squash. Coat the top with parmesan. Dig in.
I like the summer squash better than spaghetti squash. Since I can control the size and texture better.
