Fresh Strawberry Pie...Lower Carb or Not

I have made this 5 times this summer and need to share it..Although many of
you might know it very well.

For the low carb version, I make a lowcarb pie crust..You can do the almond flour one or any of your favorites..Baked..

For the high carb version, make your own or buy one from the store..I have bought the Shortbread one that is by the graham cracker crusts.

You will need about 3 cups of chunked or sliced fresh strawberries..Put them
in the cooled baked crust.

Then on the stove, heat one cup of water with 3 Tbs. of cornstarch..I add a bit of Splenda..Heat until thickened then add one small SF strawberry jello or the regular one. Stir until well combined..Let the mixture cool slightly and then
pour over mounded strawberries..Place in the fridge and let cool, then cover well
with foil or wrap.

It's not truly lowcarb with the cornstarch, but it sure is good.

I made this for my birthday and it's fabulous. I used the Low Carb Maven's Flaky Pie Crust and it's actually better than some high carb crusts I've made! I think next time I'll cut the cornstarch in half just to lower the carb count. I think it will still set up nicely. Thanks for the recipe! I'm also going to try it with fresh peaches and sugar-free peach jello. Won't be as low in carbs as the strawberry but I've still got a few peaches on my tree and it'll be a great way to use them.

I just made the peach one with wonderful peaches. I used one cup of water and 2 Tbs of cornstarch/some sweetener and a SF peach jello with a bit of cinnamon.

Peaches are pretty wet and I found the bottom crust kind of got wet and dissolved. But it was still good. I cut the peaches in bitefuls instead of slices.

Hi, Carolyn. Thanks for the feedback about the peach pie. I didn't think about them being wetter. The crispiness of the crust and the way it holds up is what I liked about your strawberry version so I think I'll find something else to do with my peaches. Don't want to ruin a good thing! Again, thanks for posting the recipe. I'm going to make it for my non-dieting bridge club and I think they'll be amazed.
