Some gluten foods worse than others?
Has anyone noticed that some gluten containing foods give a worse reaction than others? For me, pizza dough, buns, any 'soft' wheat products are the worst. Cookies, etc, not so bad. Things like fake crab meat, veggie burgers, and other stuff with gluten only give a mild delayed reaction. Or, am I actually reacting to the carb content? Thanks!

I react to levels of gluten. I don't worry about it too much if it is far down the list of ingredients and I don't eat the thing often.
Any kind of bread-y product will be both high in flour and high in gluten. Pizza dough recipes often call for extra gluten- it is the "glue" that allows the dough to be stretchy. Cookies call for a lot more butter (or other fat) and sugar than breads and cakes do. They usually contain fillers too, like chocolate chips, nuts or oatmeal.

I noticed that gluten from barley is the WORST! My last two glutenings were from barley. One made me feel like I'd gone rounds with Mike Tyson, the other gave me horrible cysts under my skin. The cysts were so bad that I am to the point of never being able to possibly risk a glutening anymore.....I was lucky that they were on my outer ear and could be eliminated with salve. If I ever got a cyst in my ear, it could compromise my hearing, lead to surgery, etc. (The cysts don't go away on their own unfortunately.)

Bagels, like pizza dough, are very high in gluten.
