What's on your plate?

I love seeing what others are eating, what about you?

I need some new ideas, I'm rather boring when it comes to food. I really despise cooking so tend to do the same thing day after day.

For instance.

My usual breakfast is a rice cake with peanut butter.
I have a protein shake mid-morning either before or after breakfast.
Lunch is usually a greek yogurt, cottage cheese, or "buffalo chicken salad" which is super good, btw!
Then dinner is much the same. Sometimes I'll have chicken or whatever meat hubby and my daughter are having with a veggie.
I have another protein shake if I need it.

Every day.

I'm thinking I need to go back to even lower carb again. Lose the rice cake and I'll be good with the above food. But that means cooking in the morning, Blah!

Help me think of low carb foods I don't have to cook much!

I meant to post the recipe for my buffalo chicken salad in my first post. Ooops.

It's just chopped or shredded cooked chicken, buffalo wing sauce, ranch, and a little salt and pepper. And SO good.

I eat leftovers for breakfast if I don't feel like frying an egg or making other breakfast type stuff. I love cottage cheese and blueberries as another quick go to meal, but I realize not everyone loves cottage cheese the way I do.

Cottage cheese with blueberries is a favorite of mine too! Have you ever tried adding a sweetener packet to your cottage cheese? OMG! It's so good. I usually do a sweetener packet and some cinnamon.

Tina~ 1 take egg beaters southwestern flavored ,sprinle shredded mexican blend cheese,break up already cooked bacon (optional)mix togetger in a bowl . Spray muffin tin . Pour into tin till half full and bake approximately 15 min. At 350 degrees. You can freeze these ,makes for a quick meal .

Yum! I've seen a few egg "muffin" recipes. I'm concerned they get rubbery or squishy when reheating though. Do they?

Trial and error too long in microwave does make them rubbery.
