Vinaigrette. I whisk a tablespoon of olive oil and a teaspoon of acid (vinegar, citrus juice) and a squirt of mustard or anchovy paste in a bowl, season with salt/pepper/herbs, and use it with just about anything. Dressing raw or cooked veggies, over fish or chicken, making egg or tuna fish. It's infinitely variable depending on what oil/acid/seasoning I'm in the mood for that day.

Bone broth.. another very versatile actor. I microwave 1/2 cup or so of veg and cup and a half of bone broth, add seasoning and fats, and puree with an immersion blender. Rich, satisfying veg-full soup. My current faves are cabbage/salsa, mushroom/spinach/rosemary, curry cauliflower w/coconut cream, and broccoli w/cream cheese.

My number one Keto food would be bacon! I love it as BLT (no bread of course), put some Sukrin syrup on it for a sweet treat, dip it in ranch or guacamole as a snack, put it on or in everything. Plus you get glorious bacon grease when you make it!!
