Tuna Mock Fried Rice
Does anyone remember this OLD recipe? I made this years ago and it was awesome. My memory is not quite the same, but I am sure you can adapt it to your tastes, but it is really good.
Tuna Mock Fried Rice 1 small can Solid White Albacore tuna (must be the albacore & drained) 1 TBLS Soy Sauce (to your taste) 1 TBLS Sesame Oil (to your taste) 2 eggs (lightly beaten) Frozen peas/carrots - I just added carrots, no peas In a non-stick skillet (or Wok), on med heat, brown the tuna using 2 forks to flake and break up the tuna until like fried rice. After it is browned, add the 2 lightly beaten eggs and cook until the eggs are scrambled. Add the soy sauce and sesame oil to taste, and then add peas/carrots and heat and serve. Obviously the ingredients can be changed/subbed to your taste of Fried Rice, but the White Albacore Tuna is the key! If you would like a larger amount, just use the big can of Albacore Tuna and adjust ingredients accordingly. I can eat this all by itself, but would be excellent with Orange Chicken I hope you enjoy it and I thank all of you for all the wonderful recipes on this sticky! |

Stuffed Philly Cheesesteak Peppers
Green Bell Peppers - cut in half and scoop out and let them bake on a sheet about 15 min while you do the rest: I use Steak'Ums and whatever cheese I want and some onions. I fry the onions and steaks then layer that into the pepper and top with cheese. Bake until they're done, probably another 15-20 min. So good! And I love this thread! |

Stuffed Shrooms
Med sized mushrooms, cap removed. Filled with cooked crumbled sausage, topped with cheddar cheese or cheese of your choice. I like to add chopped spinach to mine ![]() ![]() Bake, 375 until all warm and bubbly. Typically 25-40 mins depending on how many you are making. Just make sure the mushrooms are good and done how you would like them. |

I haven't read the entire thread but I have made bacon wrapped cheese stuffed hotdogs and they're so good. Just slice a hotdog down the center lengthwise, stuff with cheese and wrap 2 slices of bacon around the hotdog. I wrap mine tight to hold in the cheese and stick a toothpick in the end if the bacon doesn't hold. Back until bacon is crisp.

Needed something quick for lunch to haul into work. They do have a microwave.
Had to use what I had on hand. Grabbed a hunk of zucchini Leftover chicken breast ˝ avocado Salt for seasoning. Measurements don’t really matter – Enough to satisfy hunger. Cut the chicken breast into small bite size pieces. Do the same to the zucchini. Put the chicken and zucchini on a plate or in a bowl. Heat till warmed. Slice the avocado and cut into nice size pieces. Top the chicken mix with the avocado. Add the seasoning. This really turned out well for me, and so easy. |

Crockpot Buffalo Chicken
I'm new to this, so I didn't read the whole thread. Here's a good one for me, but do watch your sodium:
1 bottle sweet baby ray's buffalo wing sauce 1 family pack of boneless skinless chicken breast cook on low for a good amount of time ( i leave for work at 630 am and stir it into shreds about 5 pm) i eat it in a lettuce leaf, or low carb wrap with Kroger or Kraft Italian cheese blend, dill pickle slices, and a dab of ranch dressing. It's great for portioning and freezing for lunches at work. Top with more veggies if you like! |

I am really, really happy with a salad dressing I came up with which has like 2 carbs, tastes great, and is easy to throw together from things that are always in the fridge:
1 T. balsamic vinegar 1 tsp. soy sauce 2 T. sour cream I am putting this on all of my salads. It has a lot of flavor, and I like creamy dressing (which it is -- very). |

... Hmm, that was easy. I lovelovelove peanut butter and chocolate but wanted something easy and quick. Here it is: Peanut Butter Cocoa: 1 tblsp jif extra crunchy peanut butter (3 g net carbs, 95 calories); 1/2 tblsp hershey’s special dark cocoa (100% cocoa, 1 g net carbs, 5 calories). 2 beaten eggs sliced thin beef jerky and shredded cheddar cheese.
Depending on how many eggs, place all into a bowl, I do two eggs and a nice amount of cheese. cook eggs one min micro with paper plate covering bowl, stir add 30 secs to it and check for doneness.. add more time if you want firmer eggs. Mix in jerky of your choice *very low carb* and cheese. Stir up! Chewy steak, egg cheesy goodness! |

Made some almond meal crackers yesterday. Easy and pretty good.
One cup almond meal one egg white a little salt in with the meal poppy seeds and sesame seeds if you want mix meal with egg white, put on parchment paper , cover with saran wrap and roll to very thin. sprinkle on seeds and roll once again to set them in dough, remove saran wrap. Put parchment with dough on cookie sheet and bake for 10 minutes at 350 break into pieces and put into a 250 degree oven for 30 minutes to crisp up more ( I just turn off oven and let it cool down a little and put them back in) The one cup of meal is 24 carbs and 12 grams of fiber. Depending on how many pieces you break it into you can figure out the carbs per |

Broccoli Parmesan Lemon Garlic
One head Broccoli florets and peeled stems, steamed until tender or to your liking. While steaming, mix in a large bowl the finely chopped zest from 1 lemon; juice of that lemon; freshly grated Parmesan cheese; generous sprinkle of garlic salt, to taste. Add hot broccoli and mix very well. Serve hot. Modified original recipe from Ina Garten. She roasted her broccoli and had other ingredients. For summer I steamed it and simplified the recipe a bit.

Carrots, Marinated in Vinegar and Teriyaki sauce, with Hummus: slice carrots (I used large organic) thinly in the food processor. Steam until tender-crisp. Marinate overnight in a small zip loc bag with a splash of teriyaki sauce and rice vinegar. Add 1-oz of hummus to the bag and squish around for a yummy, crispy snack. 3 g net carbs in the hummus; 5g net carbs per large carrot. Total 8 grams net carbs per serving of one carrot and one oz hummus.
Sometimes you just want something crunchy...and Carrots are on Alton Brown's "Daily List". |

Sardines, Stir-fried vegetables, Spicy Mustard: stir-fry vegetables of choice (nice if sliced in the food processor) in the oil from a can of sardines. If the sardines have sauce, eat that with the fish and veg. Enjoy with favorite mustard. Tasty and healthy!

New favorite!
Dilled, creamy mushrooms: Slice about 5-7 larger mushrooms and saute in a pan on medium with water, a splash of soy sauce, and a splash of worcestershire sauce, plus 2 cloves of pressed garlic, until the mushrooms are cooked (maybe 8-10 minutes), stirring a few times. Spoon onto a plate with a little of the juice, top with dill and sour cream, and mix up. Add salt if needed. This is DELICIOUS! |
