Recently saw a pop-up ad saying Duke's now available at Walmart, and it appears to be available at my local store - haven't checked yet.

Hellmann's (east of the Rockies) and Best (west of the Rockies) are both made by Unilever and both contain sugar. Duke's is still made by Duke's in South Carolina and contains no sugar.

I did find the recipe page for gluccomannan, thanks to Dottie. The zucchimi recipe was mine and is basically thinly sliced zucchini layered with 1/4 cup light ricotta and some pizza sauce (lower in sugar) and mozz. I microwaved until bubbly. A little Italian seasonings mixed into the ricotta cheese.

Found this recipe on the fit foodie site:
The 25 calorie Cookie

INGREDIENTS:

2 tablespoons coconut flour
4 tablespoons peanut flour
4 teaspoons granulated stevia
1/8 teaspoon baking powder
1 teaspoon cinnamon
5-6 tablespoons unsweetened almond milk
45g sugar-free dark chocolate chips
½ teaspoon natural vanilla extract
pinch salt
METHOD:

In a bowl, combine both flours with baking powder, salt, stevia, cinnamon and vanilla.
With a fork, stir in the almond milk a little at a time, until a dough forms. Add in chocolate chips.
Roll into 14 bite-sized balls and place on a lined baking tray.
Press cookies down with the back of a fork, then bake at 350º for 10-12 minutes.
Allow to cool before serving.

I swapped out the granulated stevia for 2 packets of regular stevia and I used about 10 grams of an 85% dark chocolate bar chopped up instead of the sugar free chocolate chips. I also used only 1/2 tsp cinnamon. All of these changes yielded 13 cookies and mine are only 16 calories each and only 1.4 carbs( .5 net) !

5 MINUTE HOME MADE ALMOND MILK

I love home made almond milk, but found it too labor intensive the last few years.
Found a recipe for a quickie almond milk. Tried the recipe, tweaked the heck out of it and
it is awesome! Please give yourself a treat and try it.

Recipe for 5 min Almond Milk

1 c. finely ground almond flour (Bob's Redmill, or Honeyville)
4 c. good filtered water
2 tsp. vanilla extract or less if desired
6 pkg. Truvia (I love sweet milk so you could use less)
2 pinches of sea salt.

No need for special utensils here. Only need one nylon stocking

Place ingredients into Vita Mix or strong blender
and process for 4 minutes.

Pour milk into nylon stocking over a pitcher.
Squeeze it all out. Then I poured it over a strainer
into a bowl and then back into the pitcher. Taste.
Chill well and enjoy.
60 calories per cup.

very nice Carly. The thing about cottage cheese is that it is made of casein protein--which is a very very slow digesting protein. Cottage cheese will keep me full for many hours, which is why it is my dinner of choice on a DD.

I've also used SF jam which is nice in cottage cheese and if I want it savory I like it with season salt.

Would you mind sharing which brand of jam you use? I've tried several before that have left me unimpressed, so I'm wondering if yours is something I haven't tried yet.

I use Smuckers. It's not wonderful, but will do for something like this.

I found this at the grocery store yesterday. It was 99 cents. I figured it had DD potential.

I specifically thought of Dottie's Cheesy Potato Soup.

The pictures refuse to post correctly, but you get the idea.

there is a new product that I love--bumblebee jalapeno tuna--60 cals 2 carbs. I mix it with miracle rice and I add some vegan queso which is 10 calories, but you could add a laughing cow light for 25 more calories. anyhow, delicious, spicy and filled with protein. You could also put on one half of a Smart Bun for 35 calories--

here is a good one! Very very filling and proteiny for only 80 calories

one package miracle rice, rinsed and drained well
1/2 cup low or fat free cottage cheese
mio drops to taste

mix the above well and chill. You could also use sf jello for flavoring, but I like the texture this way.

Got me through many hours.

I do this with miracle rice and I also use yogurt as a swap out for cottage cheese.

I like using flavored extract- my favorite is maple

I need to try one of these for dinner tonight. I try to stay fairly low carb and will use full fat cottage cheese but the jello would replace the oats in the Blueberry Cobbler I .

I have a few combinations that have been my go-to DD foods lately. Not all are low-carb so those of you sticking to VLC need to check the carb counts. I'm listing out the ingredients and calories first then some delicious combinations I am discovering.

Pacific or Trader Joe's soups: red pepper tomato 110 cal/cup ; butternut squash 90cal/cup
Aidells chicken meatballs: 130 cal for 3 meatballs. Flavors: jalapeno-mango, carmelized onion, sweet and sour, teriyaki
Bags of shredded cabbage/cole slaw mix or broccoli florets: ~ 50 cal for whole bag?
Oyster sauce: 25 cal/tbsp
Green Giant rice and broccoli in cheese sauce 270 cal for entire package

Combos:
butternut squash soup with jalapeno mango meatballs cut up, add pepper and hot sauce to taste. total: 220 cal for a nice bowl of warming spicy yumminess.

red pepper tomato soup - carmelized onion meatballs 240 cal.

Rice and broccoli in cheese sauce, cook it up and add in a whole bag of steamed broccoli florets, cauliflower, or cole slaw mix. The entire batch is two big servings of about 160 calories each. Add in some protein with the meatballs or other for another 130 cal - big filling satisfying dish for about 300 calories.

cabbage/cole slaw mix, sauteed/steamed in pan and add 1-2 tbsp oyster sauce (to taste- dilute with some chicken broth, water or soy sauce to thin it out and coat all veggies). 100 cal for a big pan of that. Add in protein. and if you have some calories to spare- crush up some peanuts, almonds or cashews to sprinkle on top. Delish!

Those chicken meatballs are good in just some chicken broth too but I find the other soups more filling.

Add in protein. and if you have some calories to spare- crush up some peanuts, almonds or cashews to sprinkle on top. Delish!

Those chicken meatballs are good in just some chicken broth too but I find the other soups more filling.
Yum- these sound like they would be warm and filling.

Hot and Sour Soup

1 packet, Sodium Free Instant Chicken Broth (I used herb ox. If you use a canned broth, cut the water back to 2oz)
1 Shitake Dried Black Mushrooms, reconstituted and sliced into 6-8 pieces
4 slices Bamboo shoots, canned, slices lengthwise into 4 strips each
1/2 oz tofu Extra Firm Lite, cut into small dice and blotted dry
1/4 Clove Garlic, Raw finely minced (or pinch of garlic powder)
1/4 tsp, Ginger root Raw grated or minced (or pinch of ground ginger)
0.15 tsp, Chili Paste(to taste)
1 tsp(s), Rice Vinegar, Unseasoned
1 tsp(s), Organic Tamari Gluten Free Soy Sauce
1 large, Eggs - White only, raw, beaten
2 stalk (15g), Green Onion, Raw, slice 1 into 1” pieces and finely slice the other
10 oz Water
salt and pepper to taste

To make:
Bring the mushrooms, bamboo shoots, garlic and ginger to a simmer in 2oz of water. Let simmer 2-3 minutes, then add the remaining water and everything except the egg white and ½ of the finely sliced green onion.
Simmer until heated through, taste and add salt and pepper if desired, then stir in the beaten egg white(will cook immediately). Serve with the green onion sprinkled on top and, if you like more chili paste and tamari.

1 large egg white is only 17 calories, you can increase the protein by 4g or 8g by using 2-3 instead of just 1.

I don't thicken it, but you could use 1/4tsp (3 calories, 1g carbs) of cornstarch to give it a little more body.

I just made this and it filled a 6 cup bowl for only around 165 cals! This is my version of Hot and Sour Soup.

Hot and Sour Soup

1 pkg sliced mushrooms-60
1/2 tsp sesame oil-20
1 tsp garlic
2 tsp Chinese chili sauce
Dash cayenne
2 C beef broth-30
2-3 TBSP soy sauce
2-3 TBSP rice vinegar
1 tsp glucomannan powder in 1/3C water
1 oz tofu-17 (Mori-Nu brand is 50 cals per 3 oz)
3 TBSP egg whites-25
1 C angel cabbage shreds-13
1 scallion-10
Cilantro

Sauté shrooms in pan with Pam. When soft add sesame oil and seasonings. Add broth and soy sauce and vinegar. Add gluc mix. When thickened add egg and cabbage. Top with scallion and cilantro.

Almost Zero Calorie Salad Dressing

I have been using this homemade dressing for about 6 months. I use whatever variety of items I have on hand when I need to make another batch:

In a pickle jar or other container that can be closed tightly-
Pepperoncini Brine
Pickle Juice
SF Rice Vinegar
Salsa Verde or Green Taco Sauce
Garlic Paste
Dill Paste
Mustard
Variety of dry spices to taste

Close the jar tightly and shake really well so everything is blended together.

I keep a jar of this at all times and use it on DDs for my salad. For a few TBS it is virtually calorie free.

Every now and then I put some lime juice or ginger paste in, but not all that often.
