Hey Terri Still here. You know me and the winter months. I get the blues this time I am just hangin chillin. I got my plans and goals. I am just doing the mental mind jedi thing now. Preparing to drop about 15 lbs or so this starting this coming spring. Plus the job is getting ready to ramp up. I will be in charge of a lot of stuff; traveling back and forth. So trying to prep for that. But for the most part just chillin

In class my instructor lost her voice, so she used a whistle and smart phone. She used the phone to mark 20 sec for each exercise we did....this was a very intense workout...with 20 sec exercises you work harder and faster...it was a great workout....now I need a whoosh...LOL

Yes Ma'am. This recipe comes from Anna's Kitchen on YouTube.

Low Carb Ranch Dip
1 cup Mayonnaise
1 cup Sour Cream
1 tsp. Celtic Sea Salt (if using regular salt, decrease to 1/2 tsp.)
1/2 tsp. Black Pepper
1 tbsp. Onion Powder
1 tsp. Garlic Powder
1 tbsp. Dried Parsley
1/4 tsp. Celery Salt
1/2 tsp. Dried Dill
1/2 tsp. Dried Mustard Powder
*Optional to make into salad dressing: 1/4 to 1/2 cup buttermilk, milk or water
Mix all ingredients together in a bowl and enjoy. Will keep up to two weeks in the fridge. Makes 2 cups dip or 21/2 cups dressing.

The only carbs in this recipe is 16g. from the sour cream.
Serving Size 2 tbsp.=1g. carbs per serving (If I did the math right and I'm pretty sure I did. Lol) This count is for the dip only. If you make it into a dressing don't forget to add the carbs from the milk or buttermilk.
This stuff is so good with pork skins. You know how if you eat pork skins plain they kinda get stuck and end up making you hiccup (at least they do me) well adding this dip to it allows them to go down just nicely and its good duh! Lol

I made low carb crackers tonight. They will be a nice substitute I think for my chicken salad. I wish I had put some salt on top. Next time. I'm still experimenting how to make these. Some of them are too soft. They needed to be almost burned to be crisp enough. Its quite a task because you have to keep taking the tray out and taking off the crispy ones and then putting it back in to cook more and so on. They are tasty! My son came in and ate one and said they were good. I had to tell him not to eat them because he can eat "regular" crackers.

Shannon, you have averaged 10lbs per month! WOO HOO! (and through the holidays which is awesomer)
Angie I have the same problem with my son. While I would love for him to jump on the LC WOE wagon, I don't want him to eat all my LC foods cause he'll eat mine and his too. Lol

For example:

You do delete what you don't want to repeat, but you have to make sure you keep the "[QUOTE=...]" code at both the beginning and the end of the quote - make sure you don't delete the opening or closing brackets or anything between the two brackets.

I just got back from picking up 3 books.

Thought if I might try lower carb ,will start pushing me into burning fat and loseing weight.
The one thing, as I read here, are the types of foods and fats you have .
Just can not see how pork skins are healthy?
I just kinda went threw The Atkins Adantage and seems like that might be little more healthy.
On greens you dont have to measure? and do u count the greens and veggies?
I know i wioll on dressing.
Now how about healthier fats then just any fats? I may need some learning tips?
Today going to go and walk or jog and go detox in sauna @ steam room.
Also if I do Atkins what does he think of low sugar fruits{1-2 and green smoothies?
The more I tlk here mabe I should get reading those 3 books.
Also do i have to get rid of diet pop?
Just thought I need to do something different.
Maybe lower cabs would work?
I eat pretty clean and no bad carbs{Or breads. only subway at times?.

Kind, I have found through many years of trial and error that I CAN monitor calories very easily if I keep my fat content high. I aim for 1000-1200 calories per day, and 65-70% fat, 25% protein, and 5% carbs......when I can keep my macros at those percentages, then some days I struggle to get over 1000 calories. YMMV.....but that's what I've found works for me.

Tami - wow your ranch dip sounds I also do not like to eat just pork rinds alone...this sounds wonderful for them....on your expresso fat bombs...I do not like coffee flavor anything so could I just leave that out ....I really do not bake much...well try never LOL..so never have made fat bombs.....and have never seen Almond butter...is it in regular grocery stores ?????

Yes Ma'am you can leave out the espresso. I just put it in there for the coffee flavor. You can also trade the almond butter for peanut butter and add another square of the chocolate and this will make chocolate peanut butter fat bombs. There's no baking required for these. You can find almond butter at your local grocery store. I get mine at Krogers. Costco carries it to. It should be with the peanut butter if not check with the healthy foods section. It's a little higher than peanut butter, but to me it's worth it. I only use it in recipes. I don't eat it everyday or anything.
On the ranch dip...it's like chili. It gets better the longer it sits.

I think LC can work for you. I don't see why you couldn't count calories and do LC too. I don't count calories, but eating LC for me I find that I am not hungry and I don't graze all day cause eating the healthy fats curbs you appetite and cravings. My portions are smaller. Therefore I'm not taking in a lot of calories. I read the book The New Atkins for A New You. That helped me a lot. It took me a little bit to get used to eating the high fat foods cause I was programmed by being told all my life that I have to eat Low Fat and count my calories to lose weight. Doing that I stayed hungry all the time. Sometimes it's not about the calories. Once I got myself into fat burning mode (ketosis) I have energy. I feel better. I feel motivated.
When your doing the Atkins version of LC on induction phase you don't eat any fruit for the first two weeks. It's all about stripping it down to the basics and fats to get your body burning the fuel it is stored (fat). Then if you feel your ready you can move on the phase 2 which starts reintroducing other LC items. You can eventually have almost any berry. Apples, oranges, bananas, grapes pretty much any fruit that has a high sugar count is no longer apart of your diet. Diet Cokes especially with aspartame is a no-no. Now you can have the ones that are sweetened with Splenda. I used to drink lots of diet cokes and have found I don't really want them anymore.
When eating LC just think whole foods. Meats and LC veggies. No breads, pastas, starches (potatoes) and such. I know it sounds like a lot, but once you get over the cravings and such you'll see what we low carbers have been talking about. I do have "cheat meals" but I didn't start doing those until about 6 mos. into LC. Make sure you drink your water. Always have a plan just incase you get stuck at work and don't have a LC meal to eat. I try to prep LC foods for lunch so if I get hungry I don't have that temptation to grab that easy to fix high carb food. When I go to a dinner or BBQ I am prepared. I'll bring a LC wrap to put my burger in or have a LC veggie to go along with what ever meat they are having. I did get some strange looks at first, but when everyone saw that I was losing they understood. I even keep a travel soap box of my sweetener in my purse for when we are out and decide to eat lunch or go to Starbucks so I can sweeten my coffee or tea. A little prep time goes a long way. My husband just stopped by and asked if I was writing a book so I guess I need to close. lol Read the books you got. Comb the internet for recipes and information on LC. I get on YouTube all the time looking up recipes, watching other peoples stories. It's very helpful. If you have any questions please feel free to ask.

Haha...You know what's funny I've just stared trying and posting new recipes. I've been doing this for so long that I have gotten tired of the same old LC foods very day. I had to do something to put an new spark in my meals. They were getting boring.

I think its pretty personal.
For me, I don't measure anything. If I had to measure everything I ate it would frustrate me too much. I eat nothing with sugar or starches. My base is any protein (fat is okay), some dairy like cheese and sour cream, and green veggies. I season my food with seasonings and salt, pepper and onion. I eat SF jello almost daily. I don't drink soda but when I did, a diet rootbeer with a little cream mixed in is delish as a dessert! I stay away from the fake foods like Atkins bars etc except for shakes. I sometimes have those as a meal replacement (often breakfast). If you are on facebook there are a few very good pages to follow (Low Carb Keto Diet is one). Dr. Sara Hallberg is great too. She has a fabolous TED talk about eating low carb/high fat. There are also some great websites with lists of eat and don't eat etc.

Jan 4- DNW IF, taco salad, peanuts, salad, bunless burger w/onions,mushrooms,cheese
Jan 5- DNW leftover omelet from Tues, jello, taco salad, hot tea w/cream and sweetener
Jan 6- 296.6 protein shake, taco salad, sausage with brown mustard
Jan 7- 294.5 cheesy omelet, grilled bacon wrapped pork tenderloins w/mashed cauliflower, peanuts, mug cake
Jan 8- DNW LC pancakes w/bacon and LC syrup, spaghetti squash spaghetti and meatballs w/salad
Jan 9- 294.4 IF, taco salad w/jello, steak, salad and green beans (Texas Roadhouse)

Tomorrow we are getting some visitors from Foshan, China. Our High School, where DH teaches, has an exchange program with a school there. We send about 15 students and a couple teachers there to live and go to school for about 2 weeks. Then, they send the same here. We are hosting the 2 teachers at our home. Last time it was not a great experience. They stayed in their room instead of socializing with us. We will see what happens this time. This time its only for a week and planned out with scheduled school group activities. I've planned some nice low carb meals (except adding in rice and fruit for the guests).

I'm really so excited that I'm doing so well this time. I've been tempted but I'm finding alternatives and taking the time to try out new things. I want this to be a way of life so I'm eating that way. I want to live longer than I'm sure I will if I continue on my old path. I want to get back to my old active life when I first met my husband. I was about 230 lbs but still MUCH more active. I walked 2-3 miles most days with my dog. We loved to visit parks and other outdoor places and just walk around. Since my foot injury that all stopped.

Kit I get it. I hope it doesn't stick around long.

Terri, is TOM on the horizon? I think once in deep ketosis fasting for a day or two would be EASY!

Diana great job being strong in the face of that cake! If someone is eating something like that I usually put up a physical barrier so I can see it!

Ang, no, no TOM for me (thank goodness!) I do basically a 24 hour fast every day because I eat only at noonish. A longer fast might be something I might try on the weekend! The feeling of hunger makes me think that my body is actually USING the fat I have stored!

Belly, I get it. The blues try to sock me in every winter too. Yesterday, I should have went to the tanning spa, but I was too lazy. WTH? Too lazy to lay down? ugh . Winter is the worrrrsssttt.

This week is almost over! Looking forward to the weekend again!
