Made the sweet and sour chicken last night and it was so very yummy. The whole family ate it. I doubled the recipe and it fed a family of 5 with leftovers. Mind you our family consists of 3 very hungry young/tween boys.

Herb Vinegar
From QWL Diet Cookbook

1 cup cider vinegar
1/2 cup fresh tarragon, basil, or dill (or combinations of all three)
or
1/4 cup same herbs, dried

Combine vinegar and herbs in covered jar. Shake together well to intermix flavors thoroughly. Keep in a warm place for at least a week, shaking well now and then. Then strain twice through cheesecloth.

Use for marinating meats, or brush on fish before broiling or baking, or as a salad dressing; also in the Inches Off Diet and Stay Slim Eating. Makes 1 1/2 cups (5 calories per tablespoon)

Basic Variety Sauce

Basic Variety Sauce
From QWL Diet Cookbook

1/2 cup cottage cheese
2 tablespoons water
1/2 envelope instant chicken, beef, or vegetable broth

Process all ingredients together in blender at low speed until smooth and creamy (use small blender jar if you have one). Makes 1 cup (13 calories per tablespoon)

Variations: You may use vinegar instead of water...
You may add poppy seeds, caraway seeds, capers, chopped pickle, catsup, chili sauce, onion flakes, parsley flakes, garlic, other herbs and spices for variety.

Excellent as substitute for: mayonnaise...cream sauce...sour cream...and other high calorie sauces.

Delicious as dip for bits of meat, shrimp, crabmeat, lobster, scallops, poultry, and so on, whatever foods are permitted on QWL diet.

Seafood Cocktail Sauce
From QWL Diet Cookbook

1 cup chili sauce
1 teaspoon prepared horseradish
1 teaspoon Worcestershire sauce
1/2 teaspoon prepared mustard
1/4 teaspoon seasoned salt
1/2 teaspoon finely chopped onion
3 drops bottled hot pepper sauce
1 teaspoon lemon

Mix ingredients well, and chill. Keep in tightly covered bowl or bottle for use sparingly with QWL serving. Males 1 1/2 cups (12 calories per tablespoon)

Cottage Cheese abd Bacon Bits

16 ounces cottage cheese
2 slices bacon, very well done, patted dry with paper towel, and crumbled into bits
1 teaspoon mixed herbs

With a fork, combine thoroughly the cottage cheese, crumbled bacon, and mixed herbs. Chill before serving. Makes 4 servings (140 calories per serving)

Cottage Cheese Broth Mix

16 ounces cottage cheese
2 packets onion broth (or chicken) instant mix
1 teaspoon onion flakes or grated onion
1 teaspoon parsley flakes or minced parsley
1 teaspoon sesame seeds

Mix well all ingredients except sesame seeds with a fork or in blender. Chill. Sprinkle sesame seeds on each serving. Makes 4 servings (135 calories per serving)

Herbed Cottage Cheese

1 cup cottage cheese
1 teaspoon ground herb mix (your favorite)
2 teaspoons parsley flakes
1 teaspoon skim milk (if desired)
Salt
Pepper

Mix all ingredients well using salt and paprika to taste. Top with a little paprika for color. (As an hors d' oeuvre, spread small amounts on slices of hard-cooked eggs.) Makes 2 servings (125 calories per serving)

16 ounces no-sugar flavored soda (your choice of flavors)
2 teaspoons lemon juice

Combine soda and lemon juice, pour into ice cube tray (preferably with individual ice cube cups). Freeze until solid cubes, then use as desired any time you want quick, sweet refreshment.

You can make your own flavor combinations by mixing 2 or more sodas together, such as orange soda and ginger ale, then freezing. Makes 2 servings (calories negligible)

Maple Coffee Dessert

1 envelope unflavored gelatin (30 calories)
1/4 cup artificially sweetened "maple" pancake syrup (10 calories)
2 cups very hot black coffee
nutmeg or cinnamon

3 eggs, well beaten
1/2 teaspoon vanilla
1/2 teaspoon orange extract
artificial sweetener to equal 2 tablespoons sugar
1/4 teaspoon cinnamon
1/8 teaspoon salt

Combine all the ingredients gently, and spread in a shallow, no-stick baking dish. Sprinkle top with a little nutmeg (even tastier if nutmeg is fresh scraped on a small grater).
Bake in 325° oven (preheated) for about 3/4 hour (test by inserting knife in pudding, done when knife comes out clean). Makes 8 servings (90 calories per serving).

1 package artificially sweetened orange gelatin dessert
1 cup cold water
1 cup boiling water
1 teaspoon orange juice

cinnamon

Mix the gelatin in the boiling water in a bowl until completely dissolved. Add cold water, orange juice, and rind, stirring until completely combined. Place bowl in refrigerator until mixture is slightly thickened. Process thickened mixture in a blender at moderate speed until foamy (about 2 minutes). 1 cup cold water
2 egg whites

Dissolve gelatin in boiling water in a bowl: add cold water. Chill until partly jelled. Beat until frothy with electric mixer. Beat egg whites in another bowl until almost stiff. 2 cups cooked lean ham, all visible fat trimmed off, diced
8 ounces cottage cheese
1 tablespoon chopped green pepper
1 teaspoon chives or scallions
1/2 teaspoon dry mustard
dash of salt (if ham is salty, skip this)

Beat eggs slightly and mix with all other ingredients. Spoon into small casserole or 4 small baking dishes and bake in moderate oven until of custard consistency (about 20 minutes, depending upon size of eggs). Do not overcook. Makes 4 servings (340 calories per serving).

Homemade Chicken Soup

Homemade Chicken Soup
From QWL Diet Cookbook

2 pounds chicken wings, all possible skin and fat removed
2 quarts water
1 large carrot cut into 1" rounds
1 onion in thick slices
1 large rib celery cut into 1" pieces
4 teaspoons chopped parsley
1 tablespoon chopped dill
2 teaspoons salt
1 teaspoon paprika
1/2 teaspoon savory

In a heavy saucepan with tight cover place all ingredients including chicken. Bring to a strong boil, then cover tightly and simmer for about an hour or until chicken is fully tender to the fork. Remove chicken pieces and take off all the meat. Strain out all vegetables to produce clear soup. Let soup cool, remove fat from top. Combine chicken meat and clear soup, heat until close to a boil, then serve. Makes 4 servings (180 calories per serving).

Baked Pork Chops

Baked Pork Chops
From QWL Diet Cookbook

4 lean medium thick pork chops, all possible visible fat trimmed off
1/2 teaspoon salt
1/8 teaspoon pepper
1 teaspoon prepared mustard
1/2 cup chicken bouillon

Trim chops of all possible excess fat, and wipe with wet paper towels. Combine the salt, pepper, and mustard, and spread over tops and bottoms of chops. Lightly brown chops in a no-stick pan, or under the broiler. Place in baking casserole dish and pour in the bouillon. Cover casserole and bake in 375° oven for about 45 minutes or until chops are baked through but tender to the fork. Makes 4 servings (310 calories)

Marinated Pork Roast

Marinated Pork Roast
QWL Diet Cookbook, pg 63

3 pounds boned lean rolled pork roast, all possible fat removed
2 tablespoons no-sugar soy sauce
1 tablespoon white cooking wine
1/2 cup chicken bouillon, double strength
1 teaspoon unsweetened ginger powder
1 teaspoon ground rosemary

Mix all ingredients except the meat. Place the roast in a heavy plastic bag, pour the marinade mixture into the bag, and seal tightly so bag is leak proof. Turn the bad several times so the marinade covers all surfaces. Marinate for about 3 hours on kitchen counter, turning bag several times to distribute marinade on all surfaces.
Remove meat from the bag, place on rack in shallow roasting pan, pouring off marinade into a small bowl. Insert meat thermometer in center of roast, and cook in 325° oven until thermometer registers 170° (about 2 1/2-3 hours). Baste every half hour with marinade. Serve in thin slices. (280 calories per 4-ounce serving).

Italian Meatballs
From QWL Diet Cookbook

1 pound lean ground beef, all visible fat removed before grinding
1/4 cup beef bouillon, double strength
1 tablespoon minced parsley
1/2 teaspoon garlic salt
1/4 teaspoon oregano
1 egg slightly beaten
2 tablespoons water

Heat the bouillon in no-stick skillet. Meanwhile combine the meat and all other ingredients, mixing until moisture is absorbed. Form mixture into 1-inch meatballs. Brown meatballs in the skillet over moderate heat, and cook for about 20 minutes, turning meatballs often until cooked through. Makes 4 servings (270 calories per serving).

From QWL Diet Cookbook

1 pound lean ground hamburger meat, all visible fat trimmed from meat before grinding
Salt and Pepper to taste
4 tablespoons cottage cheese
1 tablespoon finely minced onion (or parsley)
1 teaspoon sesame seeds
1/4 teaspoon paprika

Season the chopped meat with salt and pepper to taste. Form into 8 flat patties. Combine the cottage cheese, onion, sesame seeds, and paprika, and mix together well. Place 1/4th of the cheese mixture flat on a patty, leaving about 3/8 inch of edge of meat uncovered. Place a patty on top of the cheese, and pinch edges of the top and bottom patties together to look like the usual hamburger. Repeat to make 3 more double patties. Broil about 5 inches from heat, and turn after top side is browned. Broil other side to doneness you prefer. Makes 4 servings (265 calories per serving)

Chili-Flavored Franks
From QWL Diet Cookbook, pg 73

4 all-beef frankfurters
2 slices lean bacon
1/2 cup beef bouillon
1 tablespoon chili sauce
1/8 teaspoon chili powder
1 1/2 teaspoons grated onion
1 tablespoon chopped parsley


Cook bacon until very well done, blot with paper towel, crumble bacon into bits. Place bits in saucepan, add all other ingredients except for franks, and stir well to combine thoroughly. Cover pan and simmer 10 minutes. Make shallow cuts along each frank about 1 inch apart, place in sauce, cover pan, and simmer 15 minutes more. Serve franks complete with sauce. Makes 4 servings (180 calories per serving).
