I'm sure it's in one of these threads but I wanted to tell one of my favorite ways to save money on beef.

I read an article a few years ago about slow-and-low roast beef. Basically you roast a really cheap cut, like top round or something like that, at the lowest possible temperature on your oven, all day or overnight. And the result is super tender and super flavorful.

I think the rule of thumb was 2 1/2 half hours per pound at 170 or 180. Sear it first in a cast-iron skillet. Then rub with seasoning and roast. Your house will smell amazing!

Here's what I buy for cheap

- canned tuna

- chicken thighs

-eggs

- canned sardines

Then maybe spend a little more on 1 steak or something..buy some cheap olive oil and you can make your own mayo, it's cheaper, healthier and doesn't have any small amounts of sugar added. Just be sure to use a food processor.

Shop sales and fill the freezer!

When I see meat or frozen veggies on sale, I stock up and fill the chest freezer in our garage. After I cook, I freeze the leftovers, portion them out and back into the freezer they go for lunches, dinners or whatever.

Hubby is not interested in LC - he is losing by tracking his food and exercise. Who wants to enter "half a box of cookies" on their list??
