Come on over, Honeybuns! Plenty of LC food for everyone! I'm even going to make a dessert.
Kitty, a Low Carb restaurant would be terrific! But, I'd be sabotaged by the Wheat Lobbyists and PETA, and will probably end up framed for a crime I didn't commit and then I'd have to escape and become a vigilante. It would be a whole thing. I should probably design my hero costume now so it will be ready. Amber, no wonder you never liked tuna! What, were you just eating it plain out of the can? The classic tuna sandwich recipe is mayo and chopped dill pickle-- at least that's how I grew up eating them... is there a different way I'm not aware of? I just got sick of it and started mixing up all kinds of weird stuff with it-- all of it tasted great! The Mediteranean Olive Salad was particularly tasty, and the sushi style is good... but nothing beats a big plop of mayo with some garlic, pepper and dillweed! Simple and fast! I have some artichoke tapenade in the cupboard I'm going to try next!

I like it with lemon, vinegar and red onion and jalepeno but not one wants to be around me, I always like something spicy with it, LOL The curry was good and I can take that to work, so that works!!!! I cant be chopping onions and stuff at work and I cant think that far ahead the night before, LOL

3 egg scramble w/ butter, 3 slices chopped Costco Hormel pre-cooked bacon, mushrooms, green onion, julienned Costco Earthbound Farm Organic Mixed Baby Kales, grape tomatoes, Trader Joe's shaved Parmesan/Romano/Asiago Cheese ![]() Lunch: 1 can Costco Albacore Tuna mixed w/ mayo, garlic, dillweed, cracked pepper, Gertie’s Finest Artichoke Tapenade (Costco) Celery & English cucumber sticks ![]() Dinner: Chicken breast (Coscto frozen individually wrapped) baked with garlic, salt & pepper; diced and added to Trader Joe’s Thai Green Curry Simmer Sauce (Jar, 3 carbs per ¼ cup) w/a little added heavy cream Ladled over a bed of wilted Costco Earthbound Farm Organic Mixed Baby Kales HIGHLY RECOMMENDED! ![]()

Just love this thread Angela. You have done amazing. Can't wait to read some of your journal. I think it's great how you make your own dressings. Can't wait to try some of these ideas. I will join in once I get a hang of this LC way of eating. I'm really excited about the process. Your photos will be a big help.

Thank you, Cookwithme! Commercial salad dressings give me the willies-- most of that stuff isn't even food! The homemade kind is so easy, and 10,000 times more tasty and healthy. You just need a bowl, a whisk and a microplaner for the small garlic clove. It is a few extra steps beyond unscrewing a cap, but it can be made ahead of time!
Getting the hang of LC eating can be fun once you realize how much variety there is! It is unfortunately easy to fall into a rut, though, which is why I photo and post my meals. It forces me to try new things!

It is delicious Linda!!! I make it with Ideal Conf. Sugar/cream cheese icing. Raises the carbs some, but for a treat, it is the bomb!!!

Was filling, but, meh. Minus the green beans and artichokes, add celery instead—that would have been better. For the Crepes: Tropical Traditions - Recipe - Gluten-Free Coconut Flour Berry Crepes Ingredients Servings: 6 Preparation time: 12 minutes 2 eggs 2 tablespoons coconut oil, melted Stevia liquid drops, to taste (I use about 10 drops) 1/4 teaspoon vanilla extract (can substitute almond extract) 1/8 teaspoon salt 2 tablespoons coconut flour, sifted small pinch of nutmeg pinch of cinnamon 1/3 cup whole milk (can substitute regular coconut milk*) Preparation In a medium bowl with a wire whisk, beat together the eggs, oil, stevia, vanilla, and salt. Mix in sifted coconut flour, nutmeg and cinnamon; stir in milk. Heat an 8-inch skillet over medium heat. When hot, melt a tiny pat of butter, coconut oil or palm shortening in the pan. Pour 1/8 cup of batter in the skillet and swirl around in pan until a thin layer of batter covers the bottom. The crepe should be about 6-inches in diameter. Cook 1-2 minutes, or until batter is bubbly and cooked around the edges. Flip the crepe and cook the other side for 1-2 minutes more, or until done. Makes about 6 crepes. note: working with crepes is NOT easy! I had a pretty tough time of it. I'm sure it just takes practice. |
