1 pan meals?
I'm looking for some 1-baking-dish meal ideas, where everything goes into a baking dish raw, can be put in the fridge for a few days, and then popped into the oven. Here are the ones I already have:
1. Salmon w/snow peas 2. Beanie wienies 3. Chicken w/potatoes and carrots 4. Shepherd's pie Does anyone have any other ideas?

My mom used to make this one.
Put 1 cup rice, 1 can cream of mushroom soup and 1 can water in a casserole and mix. Layer chicken thighs or drumettes on top. Shake onion soup mix on top. Cover and bake. I haven't made this in years, but I remember it being so good and so easy! |

Do you really mean leaving in the fridge uncooked for a few days? Raw fish/chicken/other meat mixed with other items before cooking? I'm not the type to apply strict foodservice sanitation controls at home, but this thought did give me pause. I'm much more familiar with precooked or partially cooked meals that can be finished/reheated, or assembled raw items that are cooked within about 1 day.

chicken spaghetti - pioneer woman site has a good basic recipe, we used rotisserie chicken to make it easier and pepperjack cheese because we like that flavor
chili cabbage rolls have you looked in to slow cooker freezer meals you prep ahead of time? Lots of resources out there

I don't even have a crock pot anymore, but I will definitely look into getting one! When I had one before I only ever seemed to use it for beef with veggies and things like pinto beans, so it never seemed to be very versatile.

One of my favorites - chicken salsa. Put chicken in dish (tenders orbreasts) pour a jar of your favorite salsa on top. Bake until chicken is cooked through. Top with shredded chedder.

Thanks guys, this is so helpful! Heidi, that's a great idea, I never considered bagging everything separately and then just being able to dump it all into a dish when I'm ready to cook. I'll definitely start doing that!
