Back from shopping .....woke up to snow so it was not the most fun adventure, however it is turning to sleet and ice later today so I decided the snow wasnt so bad after all


All stocked up now, lots of veg and fruit, beans and rice. Going to make burrito bowls tonight! I will let ya know how they turn out

I hope you all had great Holidays. Time for me to stop being lax and get back on track.

My doctor is funny...he told me to limit myself to one dessert a year and make that like 4 grapes. I was ROFL at him. He practices low carb but he's no vegetarian and reminds me that everything with sugar is the same as eating poison and the same for artificial sweetners.

So I started using Stevia in the raw. It's not bad...not as sweet as splenda but better for me so I can live with it. I have a sugar free candy habit that I need to break.

My wife jokes and says you know what is in my new fridge? SugarFree candy and and low carb bread products. Hmmm...I might have gone overboard cuz it will take me a year to eat all that up.

All I can say is it's a good thing they don't make low carb chips cuz the cabinet would be full of them too. LOL

Very very cool to find a LC doc though! Most are not fans of LC at all!!


Ok you better set a goal for weening off your fake bread and fake sweets!! Wait....do you and your wife have your own fridges???? Or you just got a new one?

Oh, I forgot I posted that! I sometimes wonder if I can really be called a low-carber. I'm only low compared to the rest of America.

I probably should give up sucralose and saccharine, but stevia, monkfruit, and erythritol don't taste right without them.

The burrito bowl was good! Layered brown rice, beans, lettuce, corn salsa and guacomole. Would make it again it was good.

Today, well this week for that matter will be a lot of juicing! Gained 8 since Nov 1! I knew I had gained a bit but 8

Nah, we share both fridges, but I got her a new one a few months back so its not filled up yet except with mostly my LC stuff. She wanted the kind with the freezer drawer on bottom and the fridge on top. The other one is a side by side.

Gotcha! I have the freezer on the bottom too, with french doors on top. Its an LG, I love love love it!!!! I do not like stainless though. With 3 dogs in the house there is always weird nose prints and other smudges on it. When we go t it they didn't have that no smudge kind out yet.



Tonight I am going to make chinese! Veggie egg rolls (baked) and noodles in peanut sauce. The rest of the fams is also having chicken. Wish me luck! Every time I try my hand at chinese I bomb miserably! But I love it and want to find something I can make at home. Going out is just not an option any longer. I feel so crummy after and have no idea what strange chemicals and additives I just ate!

I don't know much about making Chinese either. I have made a few egg rolls from rice paper wrappers and easy stir fried rice once. I hope your Chinese food turns out so you like it. Maybe it just takes practice?

Well my egg rolls were gross. No they actually tasted fine but I guess you should cook the veg before stuffing. They were super full when I threw them in the oven but then they deflated! Fried rice was great, and the noodles I loaded up with frozen chinese veg blend and added a sauce with a scoop of peanut butter and topped with chopped peanuts...very yum! Verrrrry carby but thats ok. The kids and husband loved it and took it for leftovers.


Baking some potatoes now at work for lunches this week. Will have it with some veg chili on top today.



Oh and I am going to go tonight and get that gym membership. Hubby said yes, I was on the fence.

Yeah, I cook the veggies to nearly done before putting in the spring roll wrapper, so that would make the difference.

I want to make spring rolls, but with rice paper like the Vietnamese do. I believe they are steamed instead of fried, but I'm unsure. I'm sure those thin wrappers are reletively low-carb.

You guys! I got an awesome deal on the gym membership! Got the deluxe family plan that is usually 87 for 30! Where I work we give out free gym memberships and they just merged with the one I wanted to go to. So I called and asked if I qualify for the discount...sure did! I am so excited!

I can't find those thin rice paper wrappers in my area. I have never had them but think they look like a fun thing to try!

I love spring rolls but no they aren't low carb from what I've seen. You just did in water until soft and then roll the vegetables in them. I love Asian food. I may do a curry or stir fry tomorrow.

How bad are they? Like, over 20 grams each, you think? I count net carbs. lotus33, I think maybe my favorite grocery has those because they are employee-owned, huge (in store square footage, I mean, not company-wise), and have EVERYTHING. If this store didn't exist, my next stop would be the asian grocery for sure. Do you have one in town?

It depends on what kind you get. I had to go to an Asian Market to find mine.
The Blue Dragon brand has 13 carbs for 2 wrappers. Two will fill me up.
Banh Trang was 5.8 carbs per wrapper.

There are other brands that are decent for carbs but you are right, most of them are out of sight on carb counts.

If anyone finds any with lower carbs than the two I mentioned please let us know, ok.

Oh, that's not bad at all for me. Thirteen grams for 2 wrappers isn't bad at all. (I cap out at 45 grams a meal).

Yeah if I go too low in carbs I get very lightheaded and dizzy. Not sure why. I can do low carb for about a month and then that kicks in. Weird.


The big craving monster is here today! Happens everytime I get on track. About day 3-4 the cravings are nuts for a day then it settles down again.

I used the Banh Trang. I could have sworn there were more carbs when I got a pack the last time. Maybe I miscalculated. I couldn't just have 2 though. They are so good with peanut sauce. Now I want some.

I use the ones that are rice paper. I don't know what all of them are made of, but I have seen some with like 57 -82 carbs per wrapper. Those must have white flour in them. ?

The ones I have are pretty big. I checked around via google and find that some are quite small.

Had a juice this morning -carrot, cabbage, celery, pineapple. Sounds gross but it was good.

Fruit smoothie for a snack

Lunch was a big salad

dinner......dunno yet! Will try not to blow the whole day though!

I think yes, the high-carb ones are flour and called egg roll wrappers. They are almost the same stuff as wonton wrappers. Vietnamese spring rolls are made with rice paper and that's what I was thinking of. I've seen them steamed or fried. I like how you can see the veggies through the translucent wrapper; I like pretty food.

My *swamp juice* as I am now calling them, is so ugly! today is collard greens, carrot, pineapple, cherry extract. Just makes the most disgusting colored drink, just like swamp muck! Actually does not taste bad at all though. This is a first for collard greens. I am finding it really doesn't matter the green to me, they all taste the same to me once you juice them.

Looks like you can use them like egg roll wrappers or spring roll wrappers. I saw a couple of recipes via google that chop them up and put them in stir fry. Bean curd sheets are tofu skin...doesn't sound too appetizing that way. lol

I found some recipes on pinterest (sp) too.

Bean curd sheets are also used to give a vegetarian "roast turkey" a crispy skin. I forget where I saw that. It was one of those vegan blogs.
