Grilled Goat Cheese Stuffed Peppers

This is off the HEB grocery chain web site. My changes are in bold

Grilled Goat Cheese Stuffed Peppers

Prep Time 20 minutes
Cook Time 5 minutes
Total Time 25 minutes
Serves 8 People

Ingredients
1 Lb mini bell peppers
6 Oz goat cheese
8 Oz reduced fat whipped cream cheese regular cream cheese
1 Tsp fresh thyme, chopped
1 Tbsp chives, minced
1/2 Tsp salt
1/2 Tsp pepper
3 Tbsp chopped walnuts pine nuts

Instructions
1 Heat grill to medium high. pre-heat toaster oven to 400f
2 Cut peppers in half and remove seeds.
3 In a large bowl or stand mixer, combine goat cheese, cream cheese, thyme, chives, salt, pepper and walnuts. Mix until smooth and completely incorporated.
4 Spoon mixture into zip top bag. Snip one corner and pipe out filling into halved bell peppers. spoon into pepper halves lol
5 Place peppers on grill and cook just until peppers begin to blister. Remove and serve. cook in pre-heated oven for 8 minutes, then turn on broiler function and cook until the top is bubbly and melty, about 3 minutes.

These sound good! I make jalapeno poppers a lot.

Another good/low carb use for goat cheese:

Get large shrimp, clean and de vein. Make the slit large, but not quite butterflied. Fill with garlic/herb goat cheese. Close and then wrap in prosciutto and grill.

Delicious!
