Here's the Fat Bomb recipe I made that I really liked:
Chocolate Peanut Butter Fat Bombs

4 TBSP Peanut Butter
4 TBSP Coconut Oil
1.5 TBSP Cream Cheese
1 TBSP of any flavor SF Davinci Syrup
3 SQ of Lindt DK Chocolate 85% caco (break up the squares into pieces)
1 TSP Cocoa Powder
2 Pkts. or 1.5 TSP Truvia

Place in microwave safe measuring cup. Heat for 30 sec. intervals stirring well between heat times until mixed and melted completely.(It took mine 3-30 sec. intervals) Pour into mini cupcake liners that have been placed on a baking sheet and place in freezer for 2 hours. Store in a container in the fridge or freezer.
This recipe makes 12 about tablespoon size helpings of mini fat bombs
I used a square brownie bite silicone baking mat to set mine in.
This one is my favorite Chocolate Peanut Butter version so far.
I'm trying a peppermint one soon and I'll let you know how it turns out.

Yesterday was the second day in a row without exercise and was my first "cheat" day in over 5 weeks. I felt ravenous and snacked on all sorts of low carb stuff then got into the bag of freeze dried apples. I was surprised not to see a big gain, actually. Today, however, I'm back on the horse with a good plan set out of a veggie omelette for brekkie, chicken and zucchini for dinner and THREE MILES WALKING!

We CAN do this.

Lunch out yesterday for my b-day was cancelled and switched to today. Now I have just one more next week.

Did someone say "cold?" It is SO cold here right now. We are below normal and I don't like it. It is 0* right now. High is expected to be 22*. Normal high is closer to 32*-35*. At least we haven't had an ice storm this year....yet. Haven't had much snow either. Just a couple of dustings so far. I see the Southeast is getting it again. Glad that's not us.

Thanks again for all the birthday wishes. I appreciate your thoughtfulness. You guys are the best!!

I'm so tired of feeling stress. Had it over holidays and now back to work and getting it hard due to too much work and unable to make my deadlines and feeling crappy. Oh well - this too shall pass.

I've enjoyed reading everybody's updates but haven't been up to individual replies. Sorry about that, just know I'm rooting for you. Good job on the big drops - Laura amazing! Sorry you had pnuemonia and glad you have a new doggy in your life. Teresa - welcome back. Your goal sounds very smart. Sven - way to go on the 100 lbs! Hugs to all!

I'm guessing I am at a stall. That's fine. I was expecting it. I'm almost at my first goal anyways and that makes me happy.
We had hotdogs last night for supper and the problem with hotdogs when your low carbing is the bun. A hotdog wrapped in lettuce just doesn't do it for me so I made some of Atkin's Revolution Roll batter and plopped it into a hotdog bun mold I hand crafted and they worked fabulously. I even figured out a new (at least new to me) IF dessert. I'm gonna tweak it and then share it with you. Well the kiddos got a day off from school already and they just started back Wednesday. We are under a Winter Weather Advisory, which means they don't know if it's gonna snow or not. Lol Down here in the South we don't get snow much at all so we are not equipped to handle it when the roads get slick and I guess the figure that it would be better to be safe than sorry. We do get the cold though. We've had it down into the single digits before and that's cold for us. Lol I think that's cold for anyone. Haha.
On another note for supper tonight we are having tacos and I am gonna try the provolone taco shell. It looks wonderful and it's easy to do. I'll let y'all know how it turns out.
I am determined to do this!!

Tami, that Choc./PB bomb looks really good....I'm going to have to try that! And I've been wondering about those taco shells....please let me know how that turns out....we do taco's A LOT, so I typically use pork rinds as "Chips" and just have mine nacho style...it'd be nice to have an actual taco!

Kit, hope you're getting over your cold!! Great job on the new decade, it's nice to leave the 230's behind!!!

Terri, nice loss this week....4 pounds is GREAT!

Shannon, Disney with the kids is WONDERFUL motivation! Not only will you be more comfortable on the plane, but you'll be able to enjoy Disney so much more!!

Angela, how's your tummy? I agree with Tami, you can pretty much use the strips anytime....and they do say that it's supposed to be stronger in the morning, but I haven't always found that to be the case. When I need a little extra motivation or encouragement in the evenings when I tend to be more susceptible to my cravings, I go pee on a stick....watching it turn colors is usually all the encouragement I need!!

Sven....100 pounds down is AMAZING!!! WAY TO GO!!

Well kids, I'm 4 days in and feeling good!! Appetite is subsiding, energy is increasing....all of those wonderful keto side effects that we all love!

Well, it was almost a good low-carb day. It's not hard to see what went wrong yesterday We'll see if we can survive the weekend in this decade though. I still have a holiday party this weekend and next weekend. That and a kids holiday event (They have off until Jan 23 - that will be five weeks total)

Thank you all for the encouragement on the big looming triple digit milestone. This little safe zone has been very helpful. It's great to have a place where people don't judge and to get different perspectives on weight loss.

Just a quick pop-in. I've had some wonderful news that I just had to share. My ex told me this morning that come April 30, he's signing over our business to me completely. Not only will this give me complete control over the business, it will sever the last link between us so we can both get on with our lives. Life is truly good!

A student gave me a late Christmas gift. She's so sweet to bring it to me after my return. I missed those days before the holiday when students usually bring in gifts. Unfortunately, it was candy...the good kind. It was tempting for a moment but I didn't eat it.

I did use a keto strip last night. It was dark purple

Snow flurries today. The kids were so excited Its cold here in Texas!

Tami, I get it. When it gets icy or snowy around here the world shuts down.

Love the first "honeymoon" week of a diet! This too shall pass... Anywho, today we are going to fabric row in Dallas and do some shopping. I'm so excited because now I'll be buying for MY business! My daughter and I will fly home to NJ in June and we'll spend a day fabric shopping in NYC which I'm also looking forward to! Hope everyone has a wonderful weekend and keep up the great job!

I am still on plan. I'm guessing this is just apart of my ups and downs. Weight loss is a long journey and I have to find those "travel games" that will help keep me occupied until I reach my destination.
I'm hoping to be down by next week. I plan on starting back with the exercise on Monday. The date for the Color Run has been set already and I plan on running in it again this year. It was so much fun last year. It is September 9th so I have plenty of time to get ready for it.
I tried the provolone taco shells last night and I really enjoyed them. The provolone cheese really has no flavor so it takes on the flavor of what ever you put in them and I used meat, cheese, avocado, lettuce, a little tomato, and topped it off with some sour cream. It was so good and it gave me that crunch that we all love with a hard shell taco. I will definitely make them again.
I have more sewing to do today and it's a good thing that I really don't have to be anywhere cause it is 15 degrees outside with a wind chill of 0. I know, I know y'all from up North are thinking "that's no big deal. We have that on a daily basis" Lol, but we don't. That is dang cold for us. Knowing our weather patterns we'll be back in flip flops next week.

Love the first "honeymoon" week of a diet! This too shall pass... Anywho, today we are going to fabric row in Dallas and do some shopping. I'm so excited because now I'll be buying for MY business! A student gave me a late Christmas gift. She's so sweet to bring it to me after my return. I missed those days before the holiday when students usually bring in gifts. Unfortunately, it was candy...the good kind. It was tempting for a moment but I didn't eat it.

Snow flurries today. The kids were so excited Its cold here in Texas!

I saw that too. I haven't used one though. It only tests for glucose not ketosis. I'm not a diabetic, but if I was one or on the brink of being one I definitely would use one just to keep a check on my blood sugar.

Here's another recipe I tried out this morning. Now even though these are LC they are made with almond meal and cream cheese so they still have a higher carb count than say scrambled eggs and sausage, but they are a nice treat to have here an there.
This recipe come from Ketobetic Aline on youtube. She's got some easy wonderful recipes on her channel. You should check them out.

Low Carb Keto Pancakes
2/3 cup Almond Flour/Meal (blanched is best)
2 eggs
2oz. cream cheese
1 tsp. baking powder
1/2 tsp. NuStevia (or sweetener of choice) I had stevia powder. It is more pure so it's sweeter. I use one doonk, which is the little measuring spoon the comes in the sweetener, in mine. It's a much smaller mesurement. Next time I'll try Truvia.
1 tsp. Vanilla
(I felt like it needed some salt so next time I will add a dash of salt)
Heat skillet or griddle on med heat. Mix all ingredients in a Ninja or blender. Spread around some coconut oil in skillet or griddle. Pour mix in skillet or griddle and allow to cook until browned on one side. Flip and continue to cook until browned and middle is not squishy. Enjoy.
Yields 5-6 4in. pancakes
Carb count=17.2g-6g.fiber=11.2net carbs.
Calorie Count= 640
Serving Size @ 3 pancakes= 5.6 net carbs and 320 calories
These counts are going off the brand of ingredients I used.

I made these this morning and they are delicious!! I got 5 pancakes from this mix. I was really surprised to see them rise just like regular pancakes. I have tried other almond meal pancake recipes and they were always really thin and greasy. These were easy to make, used easy to find ingredients, and tasted fantastic. Even my hubby said they looked real good and that the looked just like regular pancakes. She also highly recommends Honeyville almond flour. I did some research on it and it seems to be a finer more flour texture meal and it's blanched. I ordered me some on the honeyville website. It's cheaper to get it there than on Amazon.
