Sure...All you do is get you some thick sliced provolone place a slice on a piece of parchment paper and a microwave safe plate and heat for about 1.5. It should turn a golden brown. It might take longer to get the crunch your looking for. When it comes out it will still be soft. I drape mine over some heavy duty foil and let it cool. As it cools they will harden up. They will be kinda small, but you can play with it and layer two pieces of cheese and see how it turns out.

Just proof that I need exercise. I can eat exactly what I'm supposed to, but if I don't move (sitting in a car for 3 hours and bleachers for 8) then I maintain and don't lose. On track for today. Kiddo and I are headed to the gym after the game.

You know how some days you really need to dig deep to find the positive view....well, I woke up in one of those "moods". I was still tired this morning and just feeling a bit down. I know, I have so much to be thankful for but sometimes its also overwhelming. I sat down here to record my weight....with no change from yesterday despite having stayed strong and turned down cake yesterday. I just sat looking at the screen but then I saw my ticker. 140lbs gone, 114 to go. Why am I feeling sad and down when I've actually passed the halfway mark? I'm going to chalk it up to the last of 10 days of antibiotics...lol.... and remind myself each night how much I have to be thankful for. Most of all, I'm thankful for the never ending support I've gotten over the years from the wonderful people on this site. We may not know each other face to face but you all know me heart to heart. Thank you for being here with me on this arduous journey that we're all on!

I did really well yesterday. I am definitely in ketosis.
I got up this morning @ 5:15 and got my walk in. I didn't feel up to running just yet. It was early and very cold! We have been down in the 20's and colder the past few days. It's slowly starting to warm back up. I love cooler weather like in Fall, but this artic cold stuff is for the birds.
I found another lady on YouTube her channel is Cooking Keto with Kristie. She has lost 90lbs. eating LC. She has some wonderful looking recipes that I can't wait to try.
LOW CARB GOODIE ALERT!!!
Kroger's has a low carb yogurt and milk line. It's called CarbMaster. Their yogurts are good, but I have found that they started carrying a smoothie as well. They were on sale 10 for $10 so I got a couple and they taste great. I've only tried the mango one and it was wonderful. The carb count is 7g for one which is not that bad for a smoothie. Just thought I'd share.

Who knows...the only thing I've done differently is didn't drink my 140oz of water over the weekend. It's so much easier at work. We have a cold water dispenser and a bathroom in my office. Easy to get it all in relatively quickly. Not so at home...

This is more like it, but I'd sure like to be in my 20's by now.

I totally know how you feel, Laura. I've been doing really well since getting back on track but it's hard not to kick myself for gaining so much in the last few years. I keep thinking if I'd stayed at 180 where I was a few years ago, I'd be in my 160s by now. However that doesn't help, and I'm doing well now, so that's what I need to think about.

So all my good behavior over the weekend and avoiding the wine and chocolate indeed paid off!!!! That's such an encouraging way to start the week!

Laura, You've lost 140 pounds....that A-MA-ZING!!! Seriously, how inspiring...keep it up!!

Theresa, I love treadmills! I've never had one though, only used the professional ones at the gym, so I'm afraid I can't be of much help....good luck though and let us know what you do get!

Tami, I'm going to have to check out those youtube videos, I'm always up for new inspiration!

Oh, I just have to share something super yummy with you all....last night we got home from the ranch and I still needed to get some calories in for the day....I didn't want to cook anything, so I raided the fridge and got creative and I ended up making the YUMMIEST treat .....it was lick the bowl good!! I'm calling it raspberry cheesecake chaos it was 2 oz cream cheese, 1 T butter, a dash of sweetener, all stirred up in a bowl until smooth and creamy, then I stirred in 2 oz fresh raspberries and 10 semi-sweet chocolate chips ( I really do count and measure everything) I stirred it all together, and O.M.G......it was so good I'm going to have to be sure I only make it 1 serving at a time!

Well, off to work....Happy Monday everyone!

We didn't lose power yesterday but I still didn't get all of my work done. Still dealing with major anxiety over this. Maybe that's why my scale is stuck - well that and eating a few more carbs than usual (but still counting calories). Hang in there all.

Laura - 140 pounds lost so far - That's fabulous!

I just took my pluse it is *50<Is that good?
Seems at times I run even little less but seems to stay aroung 50
Just wondering.
Still doing ok. gained 2 lbs. Now 130 instead of 128
But seems i jump back and forth. But can not let my scale run my thoughts. Seems It throws me back wards. But I have kept with this and I will reach goals.
When it throws me, I seem to want to just stop and that is Not me.{Why?
And I tell self, That it really does not really matter in between weigh ins {For the month, But what the scale said month to month.
Talking about tredmil, I should also use it {when I have off days at the gym.
Kinda just wondering on pluse rate.

Jan 9 DNW. Like Terri cold here. Snowed in. Wasn't as diligent as I usually am.

Currently, I am "cruising" just trying not to gain. As is how it works for me. My mojo returns from vacation starting in the Spring season and somehow ends beginning in the Fall . Just gone by Winter.
During the spring and summer times inspiration flows, weather is nice to start my usual outdoor calorie expending. So far so good. I usually gain at least 15 or so lbs during the winter. But this time I am maintaining only putting on a lb or 2 then losing it quickly. So I am happy about that. I guess I finally found that ratio to keep my weight balanced without the yo-yo effect.

Last I checked I was 213.5 so the goal is to lose about 20lbs. Should be easily doable and realistic.

Hey has anyone check out CoolSculpting? A procedure that can help get rid of stubborn bulges? If you had any experience. Or, thinking about it. I would love hear your input on the subject.

I am so trying this. My SIL made tacos. They were so good. Couldn't resist. I had two one with half the shell. Wanted more. Wish the shells were lo-carb.

I started out weighing 243 last year. About 3 weeks in I started feeling thinner. But it didn't start showing until about 6 weeks. I soon discovered a pair jeans I bought. Forgot about. Found them and had to put 2 large safety pins on each side to hold them up! They were a size 18w! I am now sporting 14w 16s and some 12s!

Right on sis we both lost 30lb last year. Let's keep the spirit. Yeah water when you don't feel like drinking that much. But it is key and does help. I am better at it during summer.

Alcohol period. I found vodka forgiving so I have that but only on the weekend. Else, it turns straight into glucose for me. TG I don't care for chocolate that much. I feel for you guys,

(But salty snacks. Oh man, just keep them away from. I cannot eat a handful of nuts or a few chips. I like to OD on that. )

Janet that's usually a resting pulse rate for an athlete, which as much as you run and all will probably be just about right. If your worried mention it to your Dr. the next time you go. My resting pulse rate is usually between 65-78 sometimes it's higher. My husband works with a man who is a big time athlete. He is in his 60's and his resting pulse rate is in the 40's. He has to be careful when he stands up from a sitting position cause it makes me dizzy. KUTGW!!!

Hey there Miss Belly!!! We missed you. Sorry your snowed in. When you make your shells try adding some taco seasonings of some kind and let me know how it turns out. I'm gonna try that next time. Provolone cheese really has no flavor so I thought I wonder if you can add some salt, garlic powder, pepper and cumin to give it that Mexican flavor.

I was looking at the pro form but maybe moving towards the sol. Thanks for letting me know your opinion.

Your bp sounds low, my resting is in the 60's, I guess we are all different but still sounds low.

I can't afford the commercial grade but looking at ones that are the next best thing. I am looking at Sol, Pro Form and Nordic Track, they all have good and bad things about them. I originally wanted Nordic Track Incline model, goes up to 40%, but after reading and calculating, my husband wouldn't be able to use it to it's full capacity because of his height and our ceilings so back to normal treadmills.

Jan 4- DNW, IF, taco salad, peanuts, salad, bunless burger w/onions,mushrooms,cheese
Jan 5- DNW, leftover omelet from Tues, jello, taco salad, hot tea w/cream and sweetener
Jan 6- 296.6 protein shake, taco salad, sausage with brown mustard
Jan 7- 294.5 cheesy omelet, grilled bacon wrapped pork tenderloins w/mashed cauliflower, peanuts, mug cake
Jan 8- DNW LC pancakes w/bacon and LC syrup, spaghetti squash spaghetti and meatballs w/salad
Jan 9- 294.4 IF, taco salad w/jello, steak, salad and green beans (Texas Roadhouse)

We had a birthday party at my mom's yesterday. She was serving a family favorite of Spaghetti and meatballs. My mom's meatballs are the bomb! She doesn't soak them in the sauce so they are very low carb. I brought along my spaghetti squash. I know the sauce can be sugary so I used only a bit and some of the dipping oil for flavor.


Tammy, I like to enjoy a few different things on the weekends and do some fasting and super low carb during the week. Keeps me on track.

Tami I have the Walden Farms chocolate sauce but its not open yet. I've used to caramel sauce alot and think its good and I don't notice its SF. I've also tried the LC yogurt at Kroger. If the smoothies are made from yogurt then the carb count is actually less than the package shows I think. About the taco shell... does it taste like cooked cheese. I do not like crunchy cheddar cheese when it cooks too much. I didn't realize you need more liquid when using coconut flour. I'll remember that!

Laura, Great job looking at the positive. I think sometimes we just need to have a little pity party and get it over with!

Terri, on yuck I hate when that happens! Good deal getting back right away.

Bloodhound you are doing well. The trend-line is going down and that's a good thing. But I do get you. It goes on faster than it comes off!

Belly this is awesome to maintain like that over the holidays. Your body is adjusting for the new you and I think the longer you maintain the easier it is to maintain. And now you are into regular sizes! That I think is the most awesome. I've gained and lost and recall that is the BEST! I love being able to shop anywhere!

Shannon keep working on it. It can be frustrating. you will get there.

Has anyone ever made low carb crackers? I have a recipe that uses almond flour. I'm going to bake them tomorrow but want to see if anyone has some helpful tips? Crackers is one thing I miss for easy lunches for school.

Yep, there was the result of my "carb-cycling" I'm sure it was worse yesterday. As long as I'm ahead of where I was last week, I'm good.

You guys are so "cooky". . Like you cook a lot. I'm the opposite. When I'm eating on plan, the less I have to think about food the better. I grill on saturday or sunday for the entire week. And I pretty much eat the same thing every day. You might think "well, that's boring", but to me, ANY WOE without cookies, cake or chocolate is boring! Sorry, that's just me. I love my sweets and always will. I have to learn to live with that.

Okay, enough of me on my soap box. You guys have a great day! And keep up the GREAT work!
