ok, I'll take that. Thanks for the words of encouragement We've booked our trip to Disney world for May 2nd so I have a hard and fast deadline now. I want to be as low as possible by then, but I'm not going to stress about it. Hey, I'm 49 lbs less than I was 5 months ago! This just gives me the drive I need to stick close to my WOE.

I miss crackers too, usually I just make cheese crisps but it's not quite the same thing. I'm a salty snack girl, chips and dip, crackers and cheese, popcorn, nuts... mmm... don't really miss sweets.

One I got from youtube and it's a Low Carb Ranch Dip and the other one is one I came up with it's a chocolate espresso fat bomb. It's soooo good!! I'll share with you later.

I can't believe I didn't gain yesterday. Last night the stress got the best of me and I had a fat bomb, some extra dark chocolate and a small but 100% carb dinner. I hope it doesn't show up tomorrow because so far I'm back on track today and eating light.

Yep, there was the result of my "carb-cycling" I'm sure it was worse yesterday. As long as I'm ahead of where I was last week, I'm good.

You guys are so "cooky". . Like you cook a lot. I'm the opposite. When I'm eating on plan, the less I have to think about food the better. I grill on saturday or sunday for the entire week. And I pretty much eat the same thing every day. You might think "well, that's boring", but to me, ANY WOE without cookies, cake or chocolate is boring! Sorry, that's just me. I love my sweets and always will. I have to learn to live with that.

Okay, enough of me on my soap box. You guys have a great day! And keep up the GREAT work!
Sometimes I get like that too. The last few failures was due to wanting some of those "normal" things and the ease of having them so I thought I'd attempt to cook and adjust to maybe make this work better for me. I also want it to be a lifestyle and not just a short term diet. I hope this might help me be successful.

I made low carb crackers tonight. They will be a nice substitute I think for my chicken salad. I wish I had put some salt on top. Next time. I'm still experimenting how to make these. Some of them are too soft. They needed to be almost burned to be crisp enough. Its quite a task because you have to keep taking the tray out and taking off the crispy ones and then putting it back in to cook more and so on. They are tasty! My son came in and ate one and said they were good. I had to tell him not to eat them because he can eat "regular" crackers.

Shannon, you have averaged 10lbs per month! WOO HOO! (and through the holidays which is awesomer)

Oh my gosh y'all. I just had to get on here and share that I have had a fantastic day! I really am in ketosis! I haven't been hungry or had any cravings! I did a small interval run this morning and I believe it boosted my moral and gave me some much needed energy. I usually crave something sweet a few times a day and give in...well today nothing! I have had no sweets with the exception of the sweetener I use in my coffee and I feel that I'm gonna have to cut it back. It's almost too sweet. I also had one fat bomb just to see how it tasted. I have a bad habit of eating ice and I will crunch on ice all day. I usually crave it, but today I really didn't want any. I did eat some with my water that I drank with supper. Other than that that craving has really slowed down. I'm hoping it'll go away completely as long as I stick with this WOE. I am feeling like my old self again back when I was killing it on the weight loss. I know I've only lost a few pounds, but this to me is a major NSV!!! Good Night Sleep Tight!!
Tomorrow I'll post my Chocolate Espresso Fat Bomb recipe.

I made a keto dessert tonight and it was so easy and so good, maybe a little to good.

Cream Cheese, 2 oz whipped
Splenda adjust to your taste
Vanilla 1/2 tsp
Sugar Free Blackberry Jam 1 to 2 tablespoons

Mix together, let chill, and enjoy!

I am feeling really good this morning! I got my interval run in and I'm eating breakfast while I type. Last night I made my family Steakums sandwiches. They looked fantastic. For me I took a 14oz. stone ware dish and loaded it up with the sandwich goodies and added 3 different types of cheese. Then I placed it under the broiler to get the cheese all melted and gooey. I added a little drizzle of mayo. I ate it with a few pork skins. Ohhh so good!! I didn't miss the bread at all!
Now the fat bomb recipe I promised.

Chocolate Espresso Fat Bomb
1tsp. Instant Espresso - I used Medaglia D'Oro I found this at Krogers in the section where they have the Latin foods.
3oz. Boiling Water
Almond Butter 4tbsp.
Butter 4oz.
Coconut Oil 4oz.
2 sq. 100% Caco Chocolate- I used Baker's brand
Sweetener to taste
Heavy Whipping Cream 4tbsp.

To start I mixed 3oz. of boiling water with the instant espresso according to the directions on the container. Set aside to cool slightly. Place chocolate in a bag and break it with a heavy knife. (I use the handle end of a heavy butter knife) In a large glass measuring cup add all the ingredients except the HWC and espresso. Melt in the microwave in 30 sec increments. stirring after every increment until melted. Stir in Espresso. In another bowl beat the HWC just until it starts to get thick. Slowly add the HWC to the epresso mixture while beating. It should get some what thick. Doing this helps the oils to emulsify to keep them from separating. Pour into a mold and place into the freezer to set. This can take a few hours.
I have a little squares silicone mold I got from Michaels and each sq. holds a little over a tbsp. So I used a tbsp. to ladle the fat bomb into each mold. It gave me 30 tbsp. size squares. This whole batch comes out to 12g.carbs and so that makes it .4g. carbs per serving, which is fantastic!! I didn't see any nutritional info. on the espresso so I counted it as zero. If you know something I don't please let me know.
I think these are wonderful. They have a strong coffee/dark chocolate flavor. I love dk. chocolate so it's no problem for me. If your not big on dk. chocolate these are not for you.
Also I put some in the fridge cause I ran out of room in my freezer and they came out softer. To the they tasted like fudge. That gives me an idea! With that being said they need to stay in the freezer. Enjoy.

Tami, What an awesome day you had!!! And that fat bomb recipe looks awesome, I LOVE dark chocolate, in fact I really like dark chocolate covered espresso beans, so I'm going to have to try this out!!

Angela, BPC is bullet proof coffee, there are a few variations out there, but it's basically coffee with butter, coconut oil and sometimes heavy cream. I also add a SF syrup for flavor. You mix it all together, zap with a coffee frother (stick blender in my case) and that makes it all creamy and frothy....much like a latte, only super healthy and full of good fats!!

Terri, the fasting has helped for sure. I'm not doing it for weight loss purposes, but it certainly does help!

Teresa, that cream cheese blackberry concoction sounds WONDERFUL....I love sweets!! Ironically, I usually only have them when I'm LC'ing....and then only because I'm careful to ensure they have the right fats and I track them. I guess if I'm not LC'ing I subconsciously avoid them because the damage I'd do would be so much worse than it already is! Except chocolate....I always make room for chocolate!

Judy, how are you feeling? Has that Z-pack kicked in yet?

Tami - Yay! You sound so happy and joyful! I was feeling that way too when I was in ketosis with very little appetite and losing daily. Even though it feels great just to lose and have no cravings, it definitely also improves my overall mood and outlook. I'm happy for you!

So I had the best taco last night. I didn't have any provolone so I decided to use shredded mexican cheese for the shell. I took pictures for you guys in case it worked. It held together better than a regular taco shell but still had just enough crunch to it. I microwaved it for 2 minutes and then draped it over a little mold I made with straw boxes and foil. Oh I seasoned it with a little salt and onion powder first too. I used enough cheese to almost cover a regular sized dinner plate. DE-lish!

In class my instructor lost her voice, so she used a whistle and smart phone. She used the phone to mark 20 sec for each exercise we did....this was a very intense workout...with 20 sec exercises you work harder and faster...it was a great workout....now I need a whoosh...LOL

Kit....your taco looks great...I adore Mexican food.....going to fix a taco salad tonight...minus the taco chips..but with all the taco salad goodies...black olives,cheese, turkey meat, tomato...etc...can not wait

Y'all would be proud of me...yesterday when I went out to lunch w/my friend...had my spinach salad (it was wonderful and had the rest of it for supper)..well my friend loves sweets (I really can take them or leave them) well she got the fudge like chocolate cake....I love that cake LOL...but I was strong and did not even had a bite LOL
