As a self-identified carvivore, it's hard to imagine a more appealing meal than a steak and and a salad....for me anyhow.

But I do like most veggies and the broccoli and chicken recipe sounds great!

Today, I ate in a 5 hour window. Salad (510 cals) right after Church, and about half a giant 22 oz reverse seared RibEye. Waaaay tasty. That's it for today...About 1250 cals with decent macros for a KETO protocol.

If you've never tried reverse searing, do give it a whirl. I smoke 1 1/2" (choice) steaks to 130 internal...which takes an hour and a half @ about 225 degrees for the Pit temp. The Queen dislikes stronger smoke flavors like Hickory, so I only buy Apple chunks. Fine by me. Mild, tasty, and economical enough. I fire my Webber Smokey Mountain with Kingsford Briquettes and just put apple chips on top for the flavor....not heat.

Just seasoning and smoke. That's all folks!

Then comes the trick. SEAR THEM AFTERWARD!

Hot butter (just below the smoke point) in a Cast Iron skillet for about a minute each side brings about the flavor that you'd pay ~$40.00 for at a steak house.

I buy them @ Sams or Costco and do 6 at a time. ($70-75 at either place for $8/lb currently) I don't sear them all unless we have guests. I finish them for lunch ot supper over the next couple of weeks.

I always aim for rare right from the smoker, and then after about 2 flips at a minute each, I'm still rare/medium rare. If I pull one from the fridge like I did this evening, its still cold, of course and takes 4 flips or maybe 5. After 4 flips, some of the meat is more like medium which is still great. If your goal is a hot, pink center, but still with plenty of seared, flavorful browning, I'd let the meat warm to room temp before searing.

BUT I don't do that. I pull one cold, right from the fridge and sear for 4 flips. I'm still happy all the way up to medium well. My wife likes hers more rare, so that's my aiming point. A bit of skill is involved to not over cook.

There. That's not a recipe like you lifelong gourmet cooks would rave about, but I felt the urge to share my simple trick. Simple is good sometimes, no?

With a little practice, your steaks can rival a trip to a "Prime House" for a fraction of the expense.

I think I need to re-focus. Fasting helps me do that, so that I am not completely obsessed with the next time I can strap on the ol' feedbag.

I'm not really 'cheating' exactly, but I walk into the breakroom or kitchen at home too much, for a nibble of this or that or a cherry tomato, or couple blueberries, or just to open the fridge to see what's in there. (DUH! AS IF I DIDN'T ALREADY KNOW!)

My normal deal is eating in a small window of time, maybe 4 or 5 hours, up to 8 and when I do eat, to stay strictly on KETOgenic macros.

But yesterday I nibbled during my fasting window until I was just disgusted with myself. No significant calories, but it messes with my head at the least, and with my weight loss at the worst.

So I'll go with water only for a couple of days maybe and see if I can adjust my steenkin' thinkin' a little bit. Maybe I can boost my self-discipline.

Mondays are a pretty good day for a fresh start.

Slow and steady... and slow!

Ahh, less windy today, but I have the babies... I think I'm gonna try and ride before they get here. Hopefully I don't end up in the ER. Haha! I wish there weren't so many people here right now. Still snowbird season and spring break too. I don't like embarrassing myself, but at the same time, I keep having the same dream over and over... ride the bike, how freeing it is, you will feel better.

It could have been worse. I was sooooo good yesterday with calories and carbs, and I did a 6 mile hike. And then I saw the Easter candy in the freezer. Most of it did not tempt me, but then I saw the bag of chocolate mint squares from a little store nearby. The carb addict in me said, "Just have one. It won't set you back." Then she said, "well, you may as well have 3 instead of one so you can really enjoy it." So I had them. Then she said, "3 more won't be much different from the 3 you already had." At the end of it I think I had about 12. Then I asked my husband to put them someplace else.

went to church early yesterday to put up some blinds on our naked south windows. Now we won't be blinded as the sun reflects off the parking lot cars.
Tonight is my garden club meeting-will try to avoid the snack table.
Tuesday should be in the 50's, so I will start cleaning out the old metal shed at the church-I know there is some fertilizer and grass seed that might still be good, so I will go ahead and spread it around.
Wednesday- three of us plan to clean the old wood floors and put some Rejuvenate on the main walkway. It will look better and clean easier until we can sand and refinish the floors completely. the other 2 gals want to go to lunch, I might go and just have coffee with them.
Saturday will be another clean up day at the church-it will take days to organize all the supplies and tools needed for our continuing restoration work. It seems we just keep moving stuff around. Pizza will be delivered for all workers.
Sunday-church again and it is my turn to bring snacks.
So what all this boils down to - is for every activity event, there is also an overeating opportunity. So hard to stay strong and not be self indulgent.
But I'm still down 7 lbs from the beginning of the month.

JUDY: It is awfully easy, if you are already into smoking meats. Most of the sites I've seen that talk about reverse searing uses a hot charcoal bed for the sear part, which for me is too much work. I'm not set up that way at all. My Barbecuing is all "low and slow"...in fact, I've not fired up a grill in forever.

Not a single thing wrong with grilled steaks! But the smoke flavor is a different approach and we get rave reviews everytime we do this for family and friends. Now they request it for nearly every birthday party, holiday gathering etc. YMMV.....

All my smokers are "bullet" style, which use very little fuel, but won't do HUGE quantities of meat. With some cleverness, and "stacked" cooking surfaces you can smoke bigger stuff. My absolute favorite is Weber Smokey Mountain. Heavy porcelain coated steel that lasts for years. The cheap Brinkmann needs heavy modification to compare favorably to a well seasoned Smokey Mountain. I've done several modded Brinkmanns and it requires some specific tools and more time than is sensible. I use an El Cheapo Brinkmann at home myself, but it barely resembles the original. If you are unfortunate enough to already have Brinkmann in the garage, google FrankenBrinkmann for sure. Lots of ideas on modding them and they are quite capable platforms once tweaked. But they RUST if mistreated.

I just do my searing in butter on a cast iron skillet (or stainless steel skillet if at home)....usually on a gas burner or hot plate. The kids are all grown so the two of us can stretch out a $75. batch of steaks for quite a spell.

Steak and Eggs for that rare Saturday AM breakfast is a carnivore's treat.

Maybe somebody here may find this info useful.

Well, I passed the no-popcorn test at the movies, so that was a good start. Late yesterday evening I succumbed to dark chocolate and Atkins snack bars. Not saying it's 100% their fault, but they happen to come into my house just about the time things started going down hill for me. (Tami)

Judy - Good job for you with owning it. I'm doing the same thing. It is very hard but I know it is the best thing to keep us moving forward.

Bloodhound - I think I have the exact same carb addict in me. That conversation sounds very familiar.

Stan - Thanks for the advice on the reverse sear. I think we are definitely going to try that. We had Filet Mignon the other night that was actually over-seared on the outside and a little too rare on the inside. When we do get a perfectly cooked steak, I always have a concern about how to re-heat left overs without ruining it. Your style sounds perfect.

I've been wanting to make that broccoli and chicken casserole as well as some oopsy rolls for a long time. I just need to get on it. When I've made the rolls before, they were great for sandwiches but didn't last in the house more than about 4 days. I also kept them in the fridge and then lightly toasted them in the toaster oven before using them.

The movie we saw yesterday, by the way, was Beauty and the Beast in 3D. It was excellent. This afternoon DH is taking our 4th and last kitty in for her ultra-sound. We are scared to death what they will find. I hope they figure it out and it is treatable. She is a little sweetheart that acts more like a sweet puppy than an 11 year old cat. She is my shadow and even plays fetch on occasion.

Tami - I sure hope your son is doing better.

Today has been busy already. My son went to school even though he's still not feeling well. I went grocery shopping and spent almost $200, but we were out of a lot of things. I got a call from my son's doctor and the HIDA scan was pretty much inconclusive. The radiologist couldn't say either way if his Gall Bladder was the culprit. Now they are sending us to a surgeon for further examining. Now I'm waiting on the doctor office to call. My son has my cell phone in case he gets to feeling too bad and wants to come home. I just want to know for sure and get it taken care of if need be. I am still on plan and am fixing to fix me something to eat for lunch. I am actually hungry.
Stan~ Reverse searing sounds delicious. I'll have to try that the next time my hubby has his smoker out. It's a gas smoker and it's one of those kind that you want to load up when you have it running. Nothing super fancy just kinda big and it takes some work to set up.

I did it! I rode my bike! I was so shaky! Terrified actually. I only went down the street and back. It wasn't far, but I stayed on it and didn't fall. I was able to pedal it, even with a bad hip and knees, more out of breath than anything. I will try again tomorrow. I need to build up to this. My wonderful husband stood outside and watched in case I needed help. She

Went to an early evening movie (Logan - it was violent but good) last night which threw off meal times and so I ended up being hungrier and I ate more than usual. But Saturday night I felt something in my squish so I'm not completely surprised my weight reached a new low for me (at least in quite a while)

I missed the broccoli chicken casserole recipe - if someone would post a link or just tell me what page it's on, I'd appreciate it. On reheating steak - I use the butter on skillet, but I add a touch of Worcester Sauce for flavor


GW - I'll add that smoker to my possible future purpose list. I really never learned to cook outside properly. In the kitchen, I feel I have a lot more control, while outside, the meat always came back overcooked or underdone (of often both

Don't fret the weight loss pause too much. You've done a fantastic job so far and it will start to come off again soon.


Ray - "Moved VA -> AL, lowered BMI of both states" okay - that's really funny. Probably because it's true.

Tami - Ugh. I had my gallbladder out 13 years ago. I didn't have flu-like symptoms - more rather a sharp pain in my belly after particularly fatty meals (Definitely up there with the most painful experiences in my life). It got misdiagnosed and lasted a while before they finally removed it. It was quite scary, but once it was done, I felt all kinds of better.

Bloodhound - Last night I got to watch my DW eat a chocolate brownie, chocolate sauce, whipped cream concoction thing at Outback. She told me, "Here, try the whipped cream, it doesn't have sugar" So I tasted it and I said "Yes, it does" I'm so sugar sensitive right now. Of course, I think that experience is another reason I went home and had in essence a fourth meal of the day. But at least I stayed on plan.

I'm waking up lately, not knowing what day of the week it is for a few seconds. Very worrisome.

It's just been happening the last few days, but I don't like it.

Today I was halfway to the loo before it finally hit me its Tuesday.

Day 2 of a planned 2 day fast is today. Yesterday was easy. I'll have more hunger "waves" than yesterday, but they go away.

I have to count every carb I eat or else I stall. Kristin good for you trying your bike out. I started riding again 15 years ago. The first time I got on my bike I was terrified but thrilled I could do it. It is so much fun.

Slow and steady... and slow!

hoping to ride the bike today. My daughter has a job interview. Really hoping she gets this one. It's right across the street from me, good paying, with benefits. Her and baby Autumn slept over last night so I can watch her while she interviews this am. I'm not a morning person at all. This baby was awake when it was still dark out, chatting up a storm. Haha! At least she wakes happy.

Stan my Mom has been doing that lately. She even went as far as getting ready for work and driving there. She only does it when she goes to sleep and wakes up. Her doctor told her it was due to her not using her cpap. If you use a cpap make sure to put it on.

I have been keeping my food very real. I am trying to get my daily 20g of carbs from LC veggies. No snacks or sweets with the exception of my coffee and some SF gum that has been helping me through the sweets cravings and ice cravings. I make my coffee my snack and dessert. I also have been doing my interval running for the past two days. It feels good to get back to a routine.
On the gum note...I have found some gum that I just love. It is sugar free with 2g carbs (sugar alcohols that I don't count). It is Icebreakers cubes. They have quite a few flavors that is delicious! I am really loving the Raspberry Sorbet right now. It reminds me of the grape and orange flavored HubbaBubba from my childhood. Do they even still make that? I remember it being soooo good! I have also stripped my coffee of a few things. I only put 2tbsp. of HWC and my sweetener of 2pkts. of Truvia and 3 drops of sucra drops in it. What can I say I like my coffee sweet and creamy. lol I would love to be able to enjoy my coffee with less cream, but I don't think that will ever happen.

I'm 1000% on plan. Under calories, under 20 carbs, I measure/weigh everything and count every bite. It just is what it is right now.

I have a goal to be down 50 by April 7th - that's my short term goal. Just going to keep on, keepin' on.
