Sweet Potato Toast

I was watching Food Network today and they had a recipe for sweet potato toast. You actually put slices of sweet potato in the toaster! (you microwave them for 3 minutes first)
Apparently this is all the rage on social media and I googled it and came across a few recipes for it.
So, I had to try this out!
I topped the toasted slices with a wee bit of butter, SF maple syrup and some powdered ginger. Awesome!

On the show, they topped them with avocado, chicken salad and bacon and another with cashew butter, honey and toasted coconut chips.

Has anyone else tried sweet potato toast?

First I scrubbed and dried the sweet potato then I cut a thin slice off one side to lay it on so it wouldn’t roll all over while slicing it into ¼ inch slices.
I microwaved a couple of slices first like they did on the show for 3 minutes then toasted them.
On a blog I was reading, she just put them in the toaster without microwaving, but it took 4 cycles on the darkest setting.
OOOH…I was just thinking how good it would taste with cranberry sauce and a little candied ginger!

I haven't tried it but I did watch that program! How about the cauli fried rice? They talked about it like it's a new thing and we've been doing it for years! I laugh when I see these things on cooking shows that we've all been talking about and cooking for years! It's about time they catch up with us!

I hear ya Tweaker. I chuckled to myself too. And frankly, the recipe I got from here looks better than theirs!
That yogurt and pesto dip looked good though

I just tried this and I guess it's just not for me, or I didn't do it right. OK, but not something I would do again. I mostly just like sweet potatoes baked.

In one of my FB groups, a lady used the sweet potato slices for the buns on her burgers. They looked good in the picture. So that's a thought.

She said they were delicious.

Mine just didn't seem to have any taste, and a weird texture. I don't know what I did wrong. Was I supposed to put something on the slices before I toasted them? How dark were they supposed to get? I did 3 min in the microwave and then 2-3 cycles of the toaster. They were like eating cardboard.

Carol - I think they are supposed to be more of a vehicle for toppings rather than eaten plain (or spread with butter).
I like mine on the sweet side since I don't actually care for sweet potatoes and I'm always trying to find ways to eat them because I know they're good for you.

Well, see, I love the taste of sweet potatoes. I want to enjoy that, instead of using it just to go with other toppings.
