It's WEDNESDAY! What Are You Eating Today?

Morning all, hope the new year is treating you well so far.

Breakfast: 60g blueberries and a decaf coffee with stevia, vanilla extract and double cream.

Lunch: Crayfish with garlic mayo, avocado, baby spinach and cucumber, plus a PowerAde Zero.

Dinner: Chicken breast stuffed with cream cheese wrapped in bacon, with sugar snap peas.

Snack: I'll have 30g mild cheddar if needed.

Hi!

Popping out for lunch today so I will either have a salad, vitello tonnato or a bunless burger... It all depends on where we end up!

Meal 2: leftover umami burger and maybe a BLT style sandwich. Both on keto buns and with lots of homemade mayo.

Today is a high protein and high fat day!

Lunch: zucchini pizza bites and a diet soda
Snack: ranch peanuts or lightly salted almonds
Dinner: pork chops, chicken or hamburger patties... I'm pretty undecided on that. lol

Hey Bacon Girl, yesterday, after reading your yogurt + Crystal Light combo, I just realised I can replicate that in the UK. We don't have Crystal Light, we normally have "Robinsons" which is a SF fruit squash you dilute with water. However (pay attention UK folks!) there is also a "mini-Robinsons" flavour drops, which I happened to buy. OMG!! I can now eat perfectly flavoured berry yogurt at only 2g a portion! How great is that!! Of course I like it with real raspberries too, but can always combine. Kudos to you for the 'recipe' it's going to make this WOE that much sweeter!

So, I allowed myself a small spoon of (all natural 100%) peanut butter for dessert. Not on my eating plan for today but everyone around me at work today was eating peanut butter cups and I felt a bit deprived. Luckily the peanut butter I have in the house is smooth and unsalted which I'm not a massive fan of, so it satisfied the gap, but I don't want to devour the whole jar.

Dinner turned out to be Cola Weenies! with broccoli/butter. Deeeeeeelicious

Evoo in a pan with a sliced small onion until softened. Add 1 cup sf ketchup and 1 cup diet coke. Stir and simmer over med heat to thicken and reduce. Whwn nice and thick add cocktail sausages and continue to reduce until sauce is thick and sticky and clings to sausages and they are all heated through. Love it!
