This appears to be substantially easier than some of the other bread/roll recipes out there. I don't have a waffle maker or muffin top pan but will see if I can locate one of the latter.

Waffle iron "bread"

I read somewhere that the "bread" made in a waffle iron is legal on induction. Am I remembering this correctly?

Oh man . . . I do not recommend making these with WPI. Blech! I read the entire thread today and decided to give it a try. The first batch I made tasted funny but I thought maybe I just didn't like the spices. So I made a sweet batch and they tasted just as bad to me.

Does WPI have a weird taste? I used it before in KevinPA's pizza crust recipe and didn't notice it, but it also wasn't the main ingredient.

What I will say is that the texture was fantastic! Just like a real waffle. I'm going to try it again once I get more eggs but with one of the baking mix recipes (can't have soy).

I am so grateful for all of you who share recipes on this board. Even though this one didn't work out, I couldn't do this without all of the things you guys share!

I tried Slim Gyms's soy free recipe below ....

2/3 cup almond flour
I started with 3 oz of whole almonds and ground them in a food processor
1 tsp baking powder
1 tsp baking soda

3 eggs
8 oz cream cheese (room temperature)

I subbed the following for the buttermilk listed in the original recipe:
1/4 cup heavy cream
1 Tbl vinegar

and baked them in the oven. They were small flat round pancake like things, but tasted similar to real bread. Are suppose to be flat? Just curious.

I plan to get a waffle maker in the next few days and see what this mix produces that way.
I"m planning on trying this tonight with almond or coconut flour. Have you changed or tweaked this since your post?
Anyone else using almond or coconut flour and have any advice?

Waffles

Momacat - you said you substituted WPI for the bake mix - was it an even trade, or did you still have to add almond flour or something else to it?

Also....did you have to add Baking Soda and Baking Powder to the recipe?

Made these today minus the seasonings so we could have waffles. I got 16 waffles in a belgian waffle maker. These are good, hubby reluctantly agreed. I will make them again. I wanted to experiment with using these as sandwich bread, but crazy Daisy (our Great Dane mix) decided to sample the rest of the batch.

I used the recipe on page 1 of this thread, minus the parsley, garlic and onion powder. I used the recipe for the Atkins baking mix too.
