It's FRIDAY! What's on your menu?

B: coffee w/cream
L: found a low-carb soup recipe on Pinterest that's hot italian sausage, onions, sliced radishes, spinach and chicken broth. Looks interesting I think that will be lunch with fathead rolls (but lighter, just 1 cup mozzarella and 1 cup almond flour instead of more for 6 rolls instead of 4)
D: Genoa salami rolled up w/string cheese

It is a cold, snowy and icy day here in Indiana. Low carb chili will be perfect for dinner. Am I the only one who adds a few pork rinds as a cracker substitute?
DH cringes when I do that LOL! Skipped breakfast. Grilled chicken salad for lunch.

Good morning! Cindersr411, I use pork rinds as crackers or a 'vehicle' for other foods.

coffee x 2
2 eggs poached in h.m. broth
pan seared salmon fillet with dill sauce and cauliflower rice

I use pork rinds as a substitute for crackers with tuna!

I'm still having some pain when I swallow and I have a cold to boot. I don't think I'll be hitting my 10k steps today

B - hot chai with 2tbsp hwc and liquid sucralose drops, then a vanilla protein shake with matcha.

L - caramel premier protein shake mixed with iced salted caramel tea, then some caldo de pollo

D - not sure. Yesterday I ended up having a couple ounces asiago and mozzarela cheese, a few bits of shrimp scampi, a slice of salami and a scoop of sf ice cream from the buffet. I chewed extra well and ate super slowly. Wasn't that comfortable. Still waiting on doctor

Other than lunch, my menu wasn't planned today. It just sorta happened

Breakfast: 2 poached eggs with hollandaise, 3 sausages and three strips of bacon
Lunch: last of the chicken and roasted pumpkin
Snack: pork rinds with french onion dip

Tried the pork rinds in my chili. Loved it! Wonderful crunch. DH did not care for it. Said it tasted like pork in chili when they got soggy. Like that's a bad thing? LOL!
