Meatloaf and other meaty things...

Hello Lovies.

Another busy day BUT on plan! I have another meatloaf in the oven as we speak. Some of you asked about a recipe but it's really nothing special. I buy 93 or 96 % lean beef at Walmart. I add a couple generous shakes of Goya Adobo and two packages of Goya Sazon. When I reach goal, I will add onions and garlic and enjoy a couple slices with low sugar ketchup, but for now this is great and I don't feel deprived.

The amount of hard boiled eggs is per personal preference, but adding 6 really stretches the meat out and makes a satisfying dinner. So yummy for breakfast, slightly crisp in a pan with some Pam spray.

I also bake the meatloaf on a rack, kind of like a cooling rack, on top of a disposable aluminum pan. All of the fat drips down and it browns all around. I sometimes have mine with a splash of fat free, low sodium beef broth.

The trick is to not overcook it. I do an hour at 350 on the rack, loosely covered with aluminum. Then I crack up the heat to 400 for another 20 minutes to get a nice crust.

I hope this helps you guys get some ideas. I will take a couple of pictures later when I slice into it.

Tomorrow is my interview and I am NERVOUS but I am feeling so good about how things have been going. Today is day 9 on Stillmans and will probably weigh in this weekend. I didn't weigh before I started because TOM came in there somewhere, so i don't have a starting point BUT I feel so much better and in control. I can also see a difference in my stomach. I have also been on the exercise bike for 30 mins a day.

Today was a down day for me and I ate stillmans food , glad I can use what I learned with stillmans while doing Juddd!

This has been a great food day for me, but I am coming down with bronchitis! Ug. But since I am prone to it I recognize it early and get the proper meds.

Slim , I am testing my metabolism. Honestly , I am in experiment mode . I read about SBD and I can deal with low fat cheese and low carb veggies , seems well balanced . Whole 30 certainly sounds well balanced as well except the " CHEESE" I cheese .. If all fails I have my "Good ol' reliable Stillmans "

Me too!

Mim- I can't agree more! I have Graves' disease and I wish I would have found paleo before I had a thyroidectomy, maybe I could have gone into remission naturally!

Still- if you really are interested in whole30 or paleo there is a subset to it called Primal , basically paleo with dairy. It's been my WOE for over 3 years now and I love it!

Today was good I wasn't home during my hungry times so I had a normal low day. I did eat raw veggies a slice or two of boiled red potato and a few other things throughout the day. Lots of coffee and water as well. Tomorrow I'm back to packing tuna! 134.9 here I come!
