Correct, shredded chicken in buffalo sauce. One could create their own, add buffalo sauce to chicken breast (: I found it by the regular canned chicken.

I'm having this tonight for dinner, and really looking forward to it. I don't have LC cheese, so I'm using a slice of American cheese food. A tad bit higher in calories, but great for texture.

Me too, so far I've had a wee baked potato, with a wedge of LC cheese, I'll likely have that again a bit later, then whip up some cabbage, buffalo chicken, and LC cheese!
It's just now noon for me.

When I saute my cabbage I add some chopped baby kale to it. It really increases the nutritional value without increasing anything else. The baby kale is not tough or have a strong taste like regular kale.

We just tried this last night with beef, cabbage, a couple tablespoons of bone broth and the wedge of LH cheese. It was fantastic! DH liked it a lot too. Thanks to the inventor of this idea

Nik, there's a lot of different ways you can do this, and season it to your own tastes, but the basic recipe that I have done is this.

*One bag pre-shredded cabbage or cole slaw mix
*One wedge Laughing Cow or other low calorie cheese - whatever flavor you like. I like the spicy ones.
*Chicken broth, or whatever kind of broth you like
*Cubed or shredded chicken, or really whatever meat you like. I've done it with ham too. The amount you use depends on how much you want, and how many calories you want to limit to.

Sautee the cabbage in the broth until it's the consistency you want. When it's nice and hot, add the meat and break the wedge of cheese up into it. Then continue to heat a few more minutes until the cheese melts and mixes in with the cabbage.

Delicious! I ate the whole batch today, so will have to get some more cabbage for tomorrow's down day dinner. Or I might just try it with broccoli slaw. Either way, it's a keeper for sure. I can see me eating this any day!

Just FYI: If you leave the cheese at room temp for 15 minutes, it melts really smooth and easy compared to cold when it chunks up and doesn't really melt well

I love cooked cabbage and I eat it a couple times a week, for lunch. I don't always put the cheese or meat in it. I like to saute some onion and garlic in with it. I know the meat adds some needed protein but I don't always have precooked meat on hand.

I was reading a low-carb website yesterday and this gal referred to Minute Beef that she used in her crack slaw. As I read further, I saw that this was ground beef that she pre-cooked and kept in the freezer for times when she needed some in a hurry. You could probably do that with shredded chicken, too. She just packaged it in serving sizes. I think that's such a great idea for dishes like this.

I have to revive this thread because I started JUDDD and was actually using protein bars and shakes on my DD. Well someone mentioned this thread on Facebook and I tried this tonight! Excellent and filling! I know now on my DDs I will make this and keep losing weight even though I felt like I cheated!!!! Hope this helps the other Newbies!

There are so many variations so you would need to weigh/ measure and calculate for the specific ingredients and amounts you use as well as potion size.

Is it important to use Laughing Cow cheese instead of Tillamook or any other brand? Is Laughing Cow creamier or something? I love cabbage, so I've gotta give this a try. Thanks.

I have never bought Laughing Cow Cheese, but I have made this with regular cream cheese. I like it that way, but don't know how much different it would be with Laughing Cow. I love cooked cabbage, too. Also, I have never used the pre-shredded cabbage. Always just shred my own as I always have cabbage on hand.

I've never heard of Tillamook, but Laughing Cow is creamier than most of the comparable, soft, wedge, spread cheeses. I have only made this once and I had trouble even melting the LC cheese, so I'm thinking some of the firmer ones would be harder to melt, but I'm not sure.

Thank you both for the info. Tillamook is a brand of hard cheeses -- cheddar, monterey jack, etc. I've never tried soft spreadable cheeses except cream cheese. I'll have to give Laughing Cow a try. I do have to go easy of cheese, though, because it stalls me.

I don't know how you would get a hard cheese to melt enough. With cream cheese, I cut it up in very tiny pieces and mix it in and put a lid on it. That helps it melt. That would work with the Laughing Cow, too. I have never bought Laughing Cow. What is the best flavor?

I have never added meat to mine, just had the cabbage and cheese.

I like all the flavors. I think it depends what you are eating it with. I really like the French Onion (Yellow package).
