This is another recipe I tweaked (a lot) from Ginny's 2 minute donut recipe.

Dry Ingredients:
2 tablespoons parmesan cheese
1 tablespoon dark cocoa powder
1 Tablespoon of Sweetener (I use xylitol)
1 teaspoon of instant coffee
1/4 teaspoon baking powder
Wet Ingredients
1 teaspoon sugar free/calorie free syrup or water
1 large egg

Mix dry ingredients, mix together with the wet ingredients. I cooked mine in my GT xpress redi-set-go muffin pans, but you can make it in mini muffin tin. Bake 7-9 minutes.

Entire Recipe: 122 calories

I tried making it with just egg white, but they fell sort of flat. These are really good!

Makes 6 mini cupcakes.

Frosting: 2 Tablespoons of Walden Farm Caramel Syrup makes really good calorie frosting.
[/QUOTE]

Mine are baking right now... will report back! I even have the walden farms caramel syrup.

I made the 321 cake just now (twice!) and it is soooo good. I used hwc instead of water, and boy howdy! Yummmmmmmmm!

ETA: It's in here somewhere but the recipe goes like this: 1 box angel food cake mix, 1 box of any other kind you like (I used strawberry). Mix the two cake mixes together and store in a ziplock baggie (I used an empty coffee can). To make the cake, put 3 T of cake mix in a mug, 2 T of water and microwave for 1 minute (I found that 50 min. was enough for my mw, and 1 min too much). On a UD, I recommend trying hwc in place of one of the T of water, or both! 80 calories, with water. 130 with 1 T HWC and 1 water, 180 with 2 T HWC. I think milk would also be a good substitute for water. My first experiment with it was with water and it didn't taste all that good-to me. I like the cream substitute, a lot! Also would be delicious with frosting. I only had FF Redi Whip, but it was very good too.

I have been making this 3-2-1 cake on UDs and just love it! I mixed angel food and chocolate cake mixes. Instead of 3 T. of the mix, I use half again as much of the mix and, of course, half again as much water. This still gets done in my microwave in 1 minute. Then, I spread NSA cherrie pie filling over that and Reddi Wip over that. It is soooo yum!

That sounds so yummy I love cake.I would take that over a piece of pie!
What do you bake them in? A coffe cup or just a ramikin like custard cup?I think I might try using the HOOD Calorie Countdown dairy beverage. It use to be called Carb Countdown but they've changed the name.It is really good.80cal to one cup.Fat free half N half would probably work too?

Carly
I'll have to try this recipe too.I was thinking RF cream cheese for icingDo you suppose egg beaters would work in the cupcake recipe?

I can't wit to try the 321 cake, I keep forgetting to buy the ingredients!
Do you just eat it out of the mug? I might try almond milk instead of water. Would be good layered w/strawberries and then a dollop of something creamy on top!!
It is my DD, and I already went to the grocery store for my weekly shopping, not going back for this, so it will have to wait, boy I can hardly wait though.

Sher, almond milk would be good! And the calories for 2 TBLSP would be minimal!

shirl, I think the sugar free cake mix is pillsbury.

Berta, I make mine in a coffee mug. I have trouble waiting for it to cool before eating it!

Berta, you just take a whole box of chocolate cake mix and a whole box of angel food cake mix and mix the two together. I used a large rubbermaid canister and just store it in there, too.

This would be even better, if I understand you correctly. You put 4.5 T of mix, 3.5 of liquid? The original recipe makes a very small cake. It's about 3 bites. I will save it for UD's too because it's not really low cal and doesn't substitute for a meal.

I use 4.5 T of mix and 3 T of liquid, which is exactly half again as much. The 321 just seemed like too small of a cake!

For all nukers! Apologies if this is in here! I used to do this quite a bit on DD/UD and have dropped grains so won't be having again, but for those that love oatmeal...

132 Cals with truvia (add 20 cals if you use Brown Sugar)

Easiest breakfast ever! 1/4 cup oats, 1 egg, 1 tsp brown sugar, handful (20) blueberries, splash of milk, dash cinnamon. Mix it all up. Stick in coffee mug in microwave for 2 minutes.

It's a fibrous seed that swells up in water. Comes to us from Indian Ayurvedic cooking/living. The husks are the outside, and like oat or wheat bran, it adds very few carbs/calories to the meal because we can't digest the fiber. It goes through us, so it doesn't "count".

Because it swells up in water, it makes a fairly good flour substitute for low-calorie and low-carb recipes -- unlike almond meal or flax seed, both of which have more calories and don't absorb liquid.

Psyllium seed husks - Wikipedia, the free encyclopedia

If you are not used to psyllium seed, like chia or flax, I'd recommend starting with a small amount to see how your body reacts. Eating too much at once can lead to digestive grumbling in some people.

Are fried radishes tasty?

If you boil them they taste like taters. I imagine the same would be frying? I have these watermelon radishes that I picked up and will try it out.

French breakfast radishes are really yummy too, fried with a little chopped onion. They don't taste exactly like potatoes, but they're so good.
