Heather,

We were talking about Coconut cream concentrate in the ML and so I searched this forum for Kevin's cookies. I too am now interested in your attempts at the LC Samoa. They are my absolute favorite!! Did you try it yet? I still have to attempt Kevin's cookies, maybe this weekend.

Kevin: What could I sub for Not-Sugar? I have Better-Sweet (in little packets like Slenda, Malto and Ace-K mix), and, of course, Splenda.

Raz, not/Sugar is not a sweetener, it is a mix of serveral kinds of gum. None of what you listed is a sub. not/starch could be used in the same amount and you might be able to use some other gum but I have no idea how much to tell you to use because it is not something that has a direct conversion.

You could sub xantham gum, but use 1/3 as much as Not/Sugar.

Someboby seems to have depleated my cookie stash while I was away. I decided to start replenishing the stash with some of my favorites.
