Kitcat - what do you put in those low carb meatballs? Unfortunately my best recipes involve breadcrumbs (which make delicious meatballs - but not low-carb)

----below is almost a letter to myself to help remotivate - but maybe some of you could use it too

Three weeks is what it takes to develop a successful habit.
Set yourself up for success by planning what you're going to eat and preparing it (as much as you can) in advance.
Do you work at an office?
Bring a hard boiled egg/baby-bell cheese for a morning snack
Make sure you have access to cold water (lots) and diet sodas (if required)
Pre-pack a lunch salad or leftovers. - I'm big into a salad with a diced tomato with avacado, hb-egg and some protein like tuna or whatever was for dinner last night

Plan out in advance what you're going to eat at dinner times over the course of the week
Example:

Monday salmon and broccoli
Tuesday slow-cooker beef stew (carrots, onions - no taters)
Wednesday salisbury steak with green beans
Thursday sauteed chicken breast in Mushroom sauce with roasted mozzarella covered eggplant
Friday Pulled pork with sauteed kale
Saturday - low carb burgers from local fast food place (I love 5 guys, but CJ's will do)
Sunday - grilled steak and veggies
Monday - tuna steak with asparagus
Tuesday - fajita salad (sauteed onions and red peppers)
Wednesday - taco salad
Thursday - spinach carbonara
Friday - chicken wings with braised brussels sprouts

Make your carbs come from veggies and not starches - that's the whole secret of the diet - no starches or sugars - that's it. (Unfortunately sugars lurk in so many places) I try and stay away from too much sausage early on, because it tends to have sugar.

I've been having crazy dreams. About carbs. Two nights ago I dreamed my husband came home and gave me 3 packs of cigarettes (I quit smoking in 2005, he quit in 1997) and said, "no carbs!" Then last night my dream self was telling me (in my dream) that the reason my brain was so messed up with crazy dreams was that it had no carbs and I should eat a piece of white bread before bed.

Lord have mercy.

Girl those are some crazy dreams! I'm gland I'm not the only one. I don't dream about carbs though, but I do have crazy vivid dreams. Welcome to the board BTW. We love having newbies join us. Now tell your dream self to keep those carbs on her side.

I am still keeping my carb count under 20 grams per day. I have been very diligent about writing everything down so I know where my count is and not just assume. It'll plummet soon enough. I feel great. I feel like I'm losing inches and I'm good with that.
I went out with a couple of girlfriends of mine last night and we painted a beautiful peacock feather. I had never done anything like that before. It was so much fun. The ladies decided to get something to eat at CheeburgerCheeburger and I opted just for a glass of unsweetened tea. It was delicious especially after I added my sweetener to it. I wasn't hungry so I didn't feel the need to eat anything. It did look good, but I wasn't tempted. My appetite has been greatly reduced. Tonight we are having a bonfire for our kids and some of their friends. I plan on staying on track. I had found a video recipe of a coconut flour tortilla. I'm thinking I'll make me a few of those to use as my bun. Anyways I've got to get off here. I've got lots to do to get ready for the bonfire. Have a wonderful Saturday everyone!!

Sick n Tired, nice losing! Also, your dreams crack me up!

I'm going on a ladies night to a hot spring tonight and I already have a thin New York Steak cooked and ready to take for dinner. Breakfast will be bacon and eggs at the diner. It's so nice to be on track and plan for success instead of expecting and going along with failure.

Friday night the Foshan China group (we are hosting the exchange teachers) had dinner at Golden Corral then the school play. A buffet CAN be a difficult place to be for me but I did very very well. I'm glad their meat selections were so flavorful and they had some very good veggies too and of course a salad. I realize some things are more carby then if I made it but I realize that as reality if I go out. While we are hosting, I don't have have a choice of eating out or not.

This morning I had breakfast out at Denny's. I remember that IHOP puts pancake batter in their omelets but Denny's does not. Not sure if they still do or not but they did.

This is my most difficult time as well which is why I have allowed myself low carb alternatives to enjoy the same things just low carb version. So far this has been a good choice for me.

Oh pretty please post this recipe! I love Texmex and miss using tortillas. I don't mind usually but once in a while I'd like to wrap my fajitas!

Because of your words, I started a 5/6 day egg fast, and yes, I started it today. We also got a treadmill yesterday and I worked out today, so I feel better.

Thanks for the welcome back. We left on the 16th of December and back on the 5th. For some reason I just cannot get back into it. Starting again tomorrow. Have breakfast and dinner planned, breakfast bites made for next week to stop me from munching at the offices. Veggies cut for lunch. Think I'm ready, lots of water in frige.

sic-n-tired - very funny. out loud laughing. dreams are so wierd. Mine woke me up tonight and I'm sitting here typing having the last of the irish creme. good stuff. I'm hoping it will help me sleep. but I know bad! (but good)

Don't know whats going on with you Theresa and Kit, but pretty confident that you are going to be great!

Bonfire sounds good Tami. You are so good at hangin in there and Belly I like your letter to yourself. Did you struggle after getting back from family? I sure am.

Hope everyone is having a good weekend! I am ... I've lost a 8.4 pounds this week and my husband has lost 10. AND we had Chipotle last night! (Burrito Bowls - no rice or beans. Came home and added some riced cauliflower to it though.)

I also apparently don't feel the need to wear pants or underwear while dream shopping as I was clad in just a tshirt that barely covered my arse. And the police decided (over the phone) that my car must have been stolen by satan worshipers because of the way they drove over the flowers.

SicNTired - you crack me up. That is hilarious. Also - I love Chipotle salad bowls. They are so yummy and I usually lose the next day after eating one for dinner. I like to add my own ranch dressing though because their's is super sweet and probably loaded with sugar. I know that's not an issue with a bowl instead of salad. Congrats on the 8 pound loss. Yay!

Tami - Hang in there. You are feeling great and thats the most important thing for now. The loss will come as long as you stick to it!

Jenny - Welcome back. We missed you. Hope you can get back into it soon. Lots of good ideas here for just that.

Sven....I haven't made meatballs this way, yet, but what I use in meatloaf is finely ground pork rinds. I grind them in my food processor. Sometimes I use "plain" ones and sometimes I use the "Bar-B-Q" flavor. They work REALLY well in place of breadcrumbs. Even if you HATE pork rinds, you will like this. You CANNOT tell they are in there.

I even have a really good Pork Rind Waffle and Pancake Recipe that you can't tell has pork rinds in.

Don't be turned off by the pork rinds. You CANNOT tell that's what's in them.

Wonder Waffles 1-serving....(2 servings in parentheses)

2 large eggs (4)
1 Tbls. heavy cream (2)
1 Tbls. water (2)
1/2 tsp. vanilla extract (1)
1 Pkt. Splenda (2)
1/8 tsp. ground cinnamon (1/4)
1 Tbls. melted butter (2)
1 to 1-1/2 ounces (measured by weight) of crushed plain flavor pork rinds (2 or 3)


I used my food processor to get the pork rinds down to a fine, almost powdery consistency.

Beat the eggs then add the cream, water, and vanilla extract and beat some more. Mix the Splenda with the cinnamon and then sprinkle on the eggs. (Mixing the cinnamon with the Splenda before adding to the eggs helps to keep the cinnamon from clumping up as much.) When well blended mix in the ground pork rinds.

Let the mixture sit for a couple of minutes until it thickens. Then stir and check the consistency. It should be quite thick, but not too thick to spoon easily. If too thick, add a little water. If too thin, add a little bit more pork rinds. Just before you're ready to put into waffle iron, stir in the melted butter.

I have a "Belgian Waffle" baker and it makes two waffles at a time -- each about 4X4 inches. I brushed the top and bottom of the waffle baker with melted butter, then I spooned about 1/4 to 1/3 of a cup of batter on each side of the bottom half of the baker and used a spoon to spread the batter out a little. Then I closed the top of the waffle baker. It took about 5 or 6 minutes to bake the two waffles. With the recipe doubled, I had enough batter to make a total of four waffles, each about 4X4 inches.

If you have a "big" waffle iron, you will probably make just two with the doubled amount of batter. These waffles firmed up and browned just like "real" waffles.

I served them with sugar free maple syrup and more butter (of course!)

With a couple of strips of bacon, this is an awesome breakfast -- at about 2-1/2 carbs per waffle - including the syrup! Without the syrup (mine has about 4 carbs per 1/4 cup), the carb count would be about 1-1/2 carbs per waffle.

If any of you live in the south and have ever eaten at the Waffle House restaurant, they have a specialty pecan waffle. I think this recipe would be absolutely incredible with 1/2 cup of chopped pecans added to the batter. And the pecans would only add about 1-1/2 effective carbs to each waffle. Still quite a carb bargain!

To make pancakes, just add more water a little at a time after it rests until you have the consistency for pancakes.

One Serving: Fat: 41g; Carbs: 3g; Protein: 39g

First day of Egg Fast went just fine, no cravings surprisingly and I was full. My hubby looked at me last night and says "I want something sweet, I said "NO" " he didn't luckily, I have to stand my ground to make it through this.

Kit you are doing great, I see your weight and I know I should be close and that is part of my problem, I'm not sticking to the plan like I should. Anyway it's great seeing your loss because I know with determination I also can do it.

We all the same struggles just at different times, it's great being here with such great support, thanks everyone!

I planned on weighing, but this morning started off rather crazy! I manage apartment communities and live on-site at one of them, this morning I was awakened by the sound of SOMEONE pounding on my front door and thought "This BETTER be good, because my residents know NOT to bother me at home" Well, it was good (Bad).....someone drove through the community in the middle of the night and slashed a bunch of tires!!! I had to throw on some clothes, check the surveillance cameras and call the police.....they vandalized 10 cars!!!! Turns out this same gang apparently hit SEVERAL businesses and homes last night, they were quite busy!! At any rate, that's been the majority of my morning. I will weigh tomorrow, still eating on plan, still in ketosis....so I'm trucking right along!

Angela, good job at the buffet, those can be tough!!

Kit, you've got this....you can bounce back from a night off plan!

Teresa, I really enjoy egg fasts, there's so much you can do with eggs!! Stay encouraged....you can do this!! We can ALL do this, and doing together really helps!

Tami, the scale is a real jerk sometimes isn't it??? You're doing the right things, the scale WILL catch up!!
