I was gone overnight and did not get to weigh this morning, but I was REALLY good. I had my steak for dinner, sat in the hot springs, had a few sugar free drinks and some dancing at the bar, planned on bacon and eggs for brekkie, but they weren't serving breakfast at noon, so I had a blue cheese crumble ad blackened chicken salad. For dinner I had the last steak from the 3-pack. I walked around the little town a lot yesterday and already did a 3 mile walk at home today. I'm planning for 229 tomorrow!

We took our Chinese exchange teachers to Space Center Houston today. China does not have an active space program so there were very excited to see the museum. We all had fun.

I gave them a choice of what to eat for lunch (BBQ, steak, seafood, etc.) One of the choices was American Chinese food. That is what they chose. I hardly blame them. After several days of foreign food its good to eat what you are used to. We ate at a place that I believed had many traditional foods available. They enjoyed the "comfort food" as they called it. Chinese food buffets is the one of the only places you really can't eat low carb. There is at least corn starch in all the food choices. But I was careful and didn't over do it.

Judy, the waffles look wonderful! I wish I had read this before I went to the grocery store today. I will have to try them next week. I have a Belgian waffle maker.

I am drinking a wonderful Rocket Fuel Latte this morning. I got the recipe from Healthful Pursuit.com. She's got a few different recipes for different flavors.
It calls for Cacao Butter which I didn't have so I used butter, Hemp hearts, Coconut Oil or MCT oil, Grass-fed Collagen-which I didn't have either so I used beef gelatin and of course coffee. I also used sweetener. I blended it all up in my nutribullet and it is thick and frothy and tasty. Yum. It is supposed to fill you up without breaking your fat burning fast and keep you full longer. She talks all about it on her website. It is supposed to be really good for all, but especially women. My recipe obviously has dairy, but her recipe is dairy free for those who cannot do dairy. You ought to try it.

Parisfox ... thanks for the pork rinds idea! I used ground pork rinds to make a version of bread - I don't know why I didn't think to use it for a meat loaf! I found a bacon wrapped meatloaf recipe last night that I believe called for almond flour ... I'd much rather use pork rinds since I have them on hand.

spride ... holy moly almost 100 lbs down. You're my idol! Is that loss just from this past year! Yowza!!!

Not sure why the gain? I'm still in ketosis and I have been eating on plan?? The only thing I can figure is that the sweet potato fries caught up to me after all, and my fat % the last couple of days has dipped a little....my carb% has been a tiny bit higher.....good carbs....but still.....that and I struggle to drink as much water as I know I should when I'm not fasting. Oh well, I KNOW I'm on the right track, I'll just have to keep my macros dialed in and keep moving forward!! I leave tomorrow for Portland for the rest of the week....I TRULY hope they give us good food choices for the week!

Angela, Mean people suck don't they?? The police were on it though and they already caught the kids....and it's going to be ugly, they did so much damage it's well into felony territory!

Canadiangirl, we don't have any Curves around here, but I used to belong to one years ago that I really loved, you'll like it!!

Tami, I've been drinking the bullet proof coffee for a few years....I'm totally going to have to try that recipe, it sounds awesome....and I've been reading about the benefits of getting collagen into your diet....This sounds very intriguing, and yummy!

Here's the first meatball recipe from Linda Sue's website
(I do add some low-carb BBQ sauce to these when eating):

BAKED MEATBALLS
1 pound ground beef
1 pound bulk Italian sausage
2 teaspoons dry minced onion
1/2 teaspoon garlic powder
1/2 cup parmesan cheese, 2 ounces (I used the kind in a can)
2 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
Mix all of the ingredients in a large bowl using your fingers. Mix until the meat no long feels slimy from the eggs. Shape in golf ball size meatballs and place on a large baking sheet with sides. Bake at 375º for 15-20 minutes until the meatballs are done all the way through. Rinse in a colander to remove any egg and cheese that has leaked out.
Makes about 20-30 meatballs
Can be frozen
Per meatball: 92 Calories; 7g Fat; 6g Protein; trace Carbohydrate; trace Dietary Fiber; .5g Net Carbs


Here's another really yummy and decadent one I love from I breath I'm Hungry:

Low Carb Beef Stroganoff Meatballs

A delicious low carb and gluten free meatball recipe based on the classic Beef Stroganoff.
Author: Mellissa Sevigny
Recipe type: Meatballs
Cuisine: American
Serves: 4 servings (3 meatballs & ½ cup sauce)))

Ingredients
For the meatball mix:
  • 1 lb ground beef (80/20)
  • 1 egg
  • ¼ cup almond flour
  • 1 tsp kosher salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp dried parsley
  • 1 tsp Worcestershire sauce
  • 2 Tbsp butter (for frying)
For the sauce:
  • 1 Tbsp butter
  • 2 cups sliced mushrooms (white or cremini)
  • 1 cup sliced onions
  • 1 clove garlic, minced
  • 1½ cups beef broth
  • ¾ cup sour cream
  • ¼ tsp xanthan gum
  • salt and pepper to taste
  • 2 Tbsp fresh parsley, chopped

Instructions
  1. Combine the meatball ingredients (except the butter) in a medium bowl and mix well. Form into 12 meatballs. Heat the 2 Tbsp of butter in a large, nonstick saute pan. Cook the meatballs on medium heat in the butter until browned on all sides and cooked through (2-3 minutes per side.)
  2. Remove the meatballs from the pan and set aside. Add the 1 Tbsp of butter and the 2 cups of sliced mushrooms to the pan. Cook until the mushrooms are golden and fragrant (4-5 minutes.) Remove the mushrooms from the pan.
  3. Add the onions and garlic and cook for 3-4 minutes or until softened and translucent.
  4. Remove the onions from the pan.
  5. Add the beef broth to your pan and scrape the bottom to get all the yummy bits off. Whisk in your sour cream and xanthan gum until smooth.
  6. Add the meatballs, mushrooms, onions and garlic back to the pan and stir. Season with salt and pepper to taste. Simmer on low for 20 minutes. Garnish with the fresh parsley right before serving.

Notes
Approx nutrition info per serving: 452 calories, 34g fat, 6g net carbs, 24g protein

I've gained some weight but here we go again. My short term goal is to hit the 180s. I've made it into the 190s a billion times these last couple months. 180s would be new territory for me. My goal for the rest of this month is just to get back in the swing of things with my eating. Glad to see some familiar faces still around and welcome to the newbies

Okay I got tired of seeing these same numbers even thought I am totally on plan so I got out my measuring tape. I took my measurements at the beginning of the month and then today. I have lost 2.5 inches and 3.6 lbs. since I started back earlier this month. I am proud of that and seeing that gives me a bit more motivation to keep going. I know this works. I started out at 216 two years ago when I decided that I was sick and tired of being sick and tired so I've come a long ways. My journey is a marathon not a sprint. I think someone on here has that saying in their signature and it is very true. I just see others sprinting on here from time to time and while I am very excited and happy for you all I keep wondering what am I doing wrong. Why am I not losing at a faster rate. I fell like I should be dropping at least a half a lb. a day. I have found that the smaller I get the harder it is to lose. I am having to adjust my WOE to my newer more improved body size. I am just having to figure it out as I go.
On another note. We had a 3 day weekend so I didn't treadmill at all. I got back into it this morning and did my interval run and it is getting easier.

I was able to weigh this morning. I'm getting back to "normal." Not bad considering that for the first 4 or 5 days I was eating a lot of carbs. Saltine crackers helped keep my stomach settled. I thought I had gained.
