Hey kids, how's it going?????

O.M.G......it's been a CRAZY week!!!! Ok....so you've all seen the movie "planes, Trains, and Automobiles"????? yup, that was my Tuesday......my direct flight from Phoenix to Portland involved a stop in San Jose (yes, Dionne, I DO know the way to San Jose NOW) then. Re-route to San Diego before FINALLY making it in to Portland nearly 7 hours late and with no luggage! My luggage wound up in Oklahoma City before making its way back to me in Portland 24 hours later..... so, the conference is fine (better now that I have clothes and toiletries) the food choices have been AWFUL......seriously.....I think the Doubletree is anti-low carb, EVERYTHING they have served us has been breaded, or high carb.....I'm not in ketosis anymore.... I've decided it is what it is, I'll do my best but I'm not going to beat myself up.....I'll fix it when I get home this weekend.

On a Super nice note, I was recognized tonight in an awards ceremony as one of
The top 3 property managers for the entire company....it was so nice!!!!! Of course #1 would have been nicer....but that's my competitive side talking....: it seriously was an honor, I've barely been there a year and there were well over 100 managers they could have chosen from.

I need to get caught up on everyone's posts......just wanted to check in and say I'm still here!!!!!

Hope everyone has good weekend plans! We are taking a ride up to Michigan (we're northern Indiana, so it's only a couple hours) and are going to have lunch at a Big Boy. It will be our first restaurant outing since starting - should be interesting to actually order a bacon cheeseburger w/ no bun.

Thanks hehehe I got that terminology from Cooking Keto with Kristie. She's on YouTube. She's got some fantastic recipes. You ought to check her out.
On the burger w/o the bun note...you'd be surprised how many people order that. Burger King used to have the low carb option on their menu. You could go in and order a low carb Whopper and you'd get it w/o the bun wrapped in a big piece of lettuce. It was really good.

Why does it take weeks to lose 3lbs., but you can put it on over night? I know...I know it's probably just water, but still. Geeze!!
Okay...yesterday I just wasn't feeling it. I didn't do my interval run and that could have been the issue, but just couldn't focus on anything. I pretty much had the sorries. I was totally eating LC, but I ate too much. I didn't write anything down so I'm not sure how many carbs I ate yesterday. Today is a fresh new start. I am eating breakfast right now as I type. I am drinking a keto coffee. I have written everything down. I did a 45 min. interval run and I am feeling really good. I've got some cleaning to do, laundry to do, and some crafting to do.

Tammy - Those conferences and meetings are tough. It always seems like the food offerings are just bread wrapped in bread with bread on the side and cookies for dessert. Congrats on your award. It is so nice to be recognized for your hard work. Especially with all you went through just recently at work.

Tami - It is so frustrating - those quick gains and for me they are taking longer and longer to drop again. Good luck hanging in there.

Welcome to the newer or returning people. It is wonderful to see so many of us giving it our best shot to get fit and healthy.

I gotta tell you, I'm amazed at how the weight is coming off - and I know that my days are numbered and it will slow down any minute - but holy cow.

Last summer I did a pure calorie restricted diet at roughly the same calorie count daily I am now (1200). It took over a month for me to lose 10 pounds. (FWIW, my start weight last summer and my start weight last week were roughly the same because I gained the 20-25 pounds I lost back lickety split.)

Honestly, it seems to me that the only difference between the 1200 calories then and the 1200 calories now is the carb count. I have no idea how many carbs I was having, but I'm sure it was well over 100g a day vs the under 20g a day that I've been doing on LCHF. It's definitely interesting!
Actually I think you should be optimistic about seeing alot come off fairly quickly for a few months. The more we have to lose the faster it comes off. Also, if you are new to low carb it comes off faster. Not sure why but that is my experience. I bet you see the 200's by summer!

Ate right Tuesday, lost 2 pounds Wednesday. ATE THE EXACT SAME MENU WEDNESDAY, gained .7.

This is why I'm a fan of daily weighing when it comes to me .... sometimes, there's no rhyme or reason for what the scale says.

On the burger w/o the bun note...you'd be surprised how many people order that. Burger King used to have the low carb option on their menu. You could go in and order a low carb Whopper and you'd get it w/o the bun wrapped in a big piece of lettuce. It was really good.
When I first did low carb (in 1999 I think it was...went from 225 - 170) I ordered a burger at McDonalds and asked for no bun. The girl thought I was nuts. Every restaurant I went to it was like that! The next time I did low carb was years later and it was no biggie to order a bunless burger.

Our Foshan, Chinese guests left this morning so we are back to normal. We've been going and going with events happening almost every evening and weekend day! It was fun but I'm glad to be back to normal.

Every since my high carb Chinese food buffet, I'm trying to get back to it and I think I've done well! Officially 11 lbs GONE!

My low carb homemade crackers have been awesome! I eat most of my chicken salad with cucumbers or zucchini "chips" and the rest with my homemade chips. The batch I made lasted me 2 weeks!

Bacon Cheeseburger Casserole
Ingredients
• 2 pounds ground beef
• 2 cloves large garlic
• 1/2 teaspoon onion powder
• 1 pound bacon cooked and chopped
• 8 eggs
• 1 can tomato paste 6 ounces
• 1 cup heavy cream
• 1/2 teaspoon salt
• 1/4 teaspoon ground pepper
• 12 ounces grated cheddar cheese divided
Instructions
1. Brown ground beef with garlic and onion powder. Drain excess grease.
2. Stir bacon pieces into cooked beef, then spread beef on bottom of 9x13-inch casserole pan.
3. In medium bowl, whisk together eggs, tomato paste, heavy cream, salt, and pepper until well combined.
4. Stir 8 ounces grated cheese into egg mixture.
5. Pour egg mixture over beef and bacon.
6. Top with remaining 4 ounces of grated cheese.
7. Bake at 350°F for 30-35 minutes or until golden brown on top.
Recipe Notes
Mushrooms, onions, and pickles are great add-ins!

3.8g net carb per serving

I think it needs tweeking. It sorta tastes a little soufflé-like and more like an Italian dish.

Hi quick question, by heavy cream do you mean whipping cream or some other cream? We have a bunch of different types of creams each with different milk fat % so want to make sure I get it right.

Good morning all,

Well it's 6:30 am here in Portland, I'm at the airport and ready to go home!!!!! I'm tired.....haven't slept well all week. I have to start over again with my eating and getting back into ketosis......and boy am I ready for that! You know, traveling seemed to be so much easier when I was younger!

Ang, that recipe looks great, thanks for sharing!!

Kit, how long did you do your egg fast? I haven't done one of those in a while, that might be avoid way to get back into the swing of things!

Groovy girl, there are a few different variations out there, but typically an egg fast is just eggs for a period of days.....it can be a very effective way to get into ketosis and jump start your weight loss, or shake things up if you've hit a plateau.

I hope everyone is having a great weekend!!
