Now I know why I gained and haven't felt really well. Tom! My monthly has been weird since coming off birth control. I get a two week break between my periods. It sucks big time. The cramping has been bad too. I feel like I'm back in my teens. I'm hoping that this will subside as my hormones figure out what they need to do.

I'm pretty sure she means Heavy Whipping Cream. At least that's what I use when making dishes like this. Actually, it's a Crustless Quiche. I make a lot of variations to this. They are really good. I get 8 to 12 pieces out of one depending on how I cut it....which depends on what (if anything) I am having with it. The 1/8 pieces are pretty big.

Crackers
• 1 cup almond flour
• 2 teaspoons Splenda granular
• 1 egg white
• 1⁄4 teaspoon salt
• 1⁄8 teaspoon garlic powder

1. Mix all ingredients well in a small bowl; everything should be moist and the dough should hold together somewhat.
2. Put the dough on a well-greased sheet of parchment paper or heavy-duty aluminum foil, about 15x18" (it's helpful to crumble the dough mixture and spread the crumbs in a roughly rectangular shape on the foil).
3. Cover the dough with a piece of wax paper that's been sprayed with non-stick spray.
4. Roll out the dough to about 1/8" thick or slightly thinner; try to get the dough to an even thickness; you can also carefully peel up the wax paper and reshape the dough to get it as close to rectangular as possible, about 9x9" square.
5. Replace the wax paper and continue rolling until nice and even.
6. • Peel off the wax paper and use a pizza or ravioli cutter to score the dough into approximately 48 1-inch squares.
7. • Lift the foil and set it on the oven rack and bake them at 325║ for 10-15 minutes, or until golden brown.
8. • Check after 10 minutes and if crackers at outer edge are getting pretty brown, remove those and continue baking the rest until golden; use a thin metal spatula to very gently pry the crackers from the foil.
9. • Break them apart on the score lines and let cool.

That's it
I found that flipping them helps them cook more evenly. Be sure you have some time to devote to making them. You will stand by the oven and let them cook some then flip over and then remove some and wait and then remove more. They don't cook very evenly so you gotta watch. The more golden they are the more crunchy they get. I didn't use the sesame seeds becasue I couldn't' find any in the store. A friend that tried one said maybe add some course ground salt on top. I'll try that next time. Also, maybe if you wanted you could do cinnamon sugar for a bit of a sweet cracker or onion salt for an onion cracker. They are very bland so I think any sort of extra flavor would make a good cracker.

I had a hysterectomy but I still have the same sort of hormone fluctuations and some of those physical symptoms that go with it. Problem is, I can't track it like i would if I had an actual period. Awww...womanhood!

So basically you eat eggs and fat. So for every egg you have you need to have a tablespoon of fat. I used a lot of butter and cream cheese. There are a lot of egg recipes so you don't get sick of eating the same thing for every meal. I don't know if you've made the oopsie bread, but that was safe also and it went great with the eggs. It helped tremendously for the sweet craving and to get me back on track. I've seen people do it for 3 to 25 days, all personal preference, the key to staying on it, have every meal planned out. It's great for stalls too.

The top 3 property managers for the entire company....it was so nice!!!!! Of course #1 would have been nicer....but that's my competitive side talking....: it seriously was an honor, I've barely been there a year and there were well over 100 managers they could have chosen from.

I need to get caught up on everyone's posts......just wanted to check in and say I'm still here!!!!!

So I've missed some great things by the looks of it, you all are doing great!

This week was so busy and physical, I'm exhausted, 4 out of 5 days I hit over 10,250 steps, yippee. Yesterday was my son's birthday and I made him a galaxy ice cream cake and galaxy cupcakes. They turned out awesome and we all had a great laugh when we were eating it, because all of our mouths were black and so were our lips. The most important thing is all the family was here and we had a blast together. With that said I did fall off the wagon slightly but today I'm back on, all is good. Not upset about yesterday cuz it wasn't horrible with my eating just a little bad.

Anyway have a great weekend everyone!

Who knows what happened? DH gained almost a pound since yesterday too. We ate at Big Boy yesterday for lunch & Chipotle for dinner - logged everything, stayed under 20g of carbs, stayed on target calorie wise.

I tend to not lose or gain when I eat out. I think there are hidden carbs! I just know it will happen so expect it. But it usually takes a couple days. (unless water weight...that doesn't take a couple days).

We went out to have Mexican food which is usually very safe. It took a LONG time for the meal to arrive so we asked the waiter and he explained there was a shift switch so we understood but the manager brought us free dessert anyway...UGH! He brought flan. Oh my it was delish! (I bet there is a low carb version). I had about 1/3 of it. I think I ate about 15 g carbs but it was all sugar. That is gonna hurt. I don't mind a slight flux in weight but the cravings is what gets me every time. So far so good. Fasting today until "lupper". (lunch+supper...like brunch but shortstop)

Back down which is good. I ought to be a was peeing all day. I am still working the plan. I think I need to drink more water so I plan on upping my water.
Has anyone tried Moon Cheese? You can get it at Starbucks. It's a bit high in price, but nice for a sometimes snack. I really like the Pepper Jack one. I wish I could make them at home.
Angie~ Wow you are marching right on down. Great job! I thought I was the only one who said "Lupper". Lol I guess it's a Southern thing.
On another note...
In a few posts back you said that China doesn't have an active space program right now. Just curious about that. My DH works for NASA and I asked him when China's space program become inactive. He looked at me like I had two heads. He said that they are very active and that they are on schedule to put their own space station in orbit in 2020 when we take ours down. He also said somethings about their rocket program and going to the moon. I wished our program had realistic goals like that. I mean going to Mars sounds good and all, but I feel we need to get a vehicle that can take us back to the moon first. Anyways no worries about it I was just curious.
Canadiangirl~ Hang in there. Do you realize that you've lost 10lbs. in just 7 days. That's fantastic! Your body is adjusting. The fat bombs are really good. It was one of the best recipes I have tried so far. I also posted a chocolate espresso fat bomb that is good as well. It is a little strong so if you don't like coffee or dark chocolate then this one is probably not for you. I thought it was a nice change.
Sick-n-tired~ Wow you've really lost this month too. The weight gain is probably from salt. When we eat out we don't really know what goes into our food. Most places especially Chinese restaurants use a lot of salt. It'll flush out.

Years ago when I first started lc I used o make a flan/creme brulee/baked custard type thing, was pretty good to my memory and i have been thinking about looking for a similar recipe again. It has to be out there somewhere!
