Thanks for the quiche recipes Ang and Paris. I LOVE quiche. I was on a low carb site over the weekend and someone was in the habit of making two quiches on the weekend so they could take a piece to work for breakfast during the week. I hope to start that.

While I'm not quite sure why I'm not losing as I should be, I do have my suspicions. I am tweaking/twerking (HaHa Belly) my plan. While I am at or under my daily carb total. I have been eating an Atkins goodie here and there. What can I say I'm a sweets person. I love sweets. Although the sweet cravings are almost nonexistent I still have a hankering for something sweet from time to time and that could be my problem. I do drink coffee, but I don't over do the sweetener or cream. I also have found that when I'm bored I snack. I know it's allowed on my plan, but that could be hindering me also, so I'm cutting that back. I know I can do this. I've done this before.
Terri~ I seem to self sabotage too. I'll lose some weight and then think that I deserve some kind of treat. I need to make the treat be unrelated to food.

Terri, I think owning the self sabotage and staying plugged in are a HUGE part of long term success! It's so easy to fall off the wagon and disappear....and when that happens then it's easier to stay off the wagon, I know from experience!! I think you're doing amazing with your losses so far!!

Teresa, great job on the walking, it really paid off!!

Kit, Wine and chocolate are definitely my weakness.....I can totally relate!! But you've got this.....we can totally do this!

Tami, I have found for me personally, that it's not just a matter of keeping my carbs low, but increasing my fat. When I started tracking my food really diligently I found my "magic" formula is keeping my fat to at least 70% of my daily calories and carbs at or below 5%....when I do that calories ALMOST don't matter....if I have to eat more to get to that ratio I will, and still lose. YMMV, but I have found when I get stuck if I check my macros, I've usually let my fat % drop, and when I fix that I USUALLY start losing again. Either way, you're making progress and you're doing GREAT.....if you keep it up you WILL reach your goal!!

Ok ladies, I'm back in ketosis, and the extra pounds I gained while traveling are starting to drop off again. We can absolutely do this together....let's rock!!

Pizza crust ...

8 ounces cream cheese, softened
4 large eggs
1 cup ground pork rind
1⁄4 cup parmesan cheese
2 cups shredded Italian cheese
1⁄2 tablespoon Italian spices
1⁄2 tablespoon garlic powder

Preheat oven to 425. Mix cream cheese, eggs, seasonings, and Italian cheese, mix well. Add ground pork rinds last. This will be a very thick mixture.

Plop the dough onto a heavily Pam-sprayed pizza pan, or cover a pizza pan with parchment paper. Cover with plastic wrap or wax paper and roll or pat out to edges. It's a very workable dough.

Bake the crust for 20 minutes, remove from the oven and let stand 10 minutes. Top with the lowest carb pizza sauce you can find, mozzarella cheese and favorite toppings, bake again until bubbly. Allow to stand for 10 minutes before cutting.

Per Serving (excluding unknown items): 165 Calories; 14g Fat (76.5% calories from fat); 8g Protein; 1g Carbohydrate; trace Dietary Fiber; 132mg Cholesterol; 226mg Sodium. Exchanges: 0 Grain(Starch); 1 Lean Meat; 2 Fat.

Lots of the comments on the recipes were about how filling it was ... which I really didn't believe. Until i ate it and found two slices were = to about 4 of a Domino's type pizza. No joke!

Morning or good day y'all.

I'm still maintaining my weight which is the goal and a feat. For me I use to bounce way up. I found my maintenance balance! Soon when the spring comes Yes Tami I will be tweaking/tweaking the plan for loss.

You guys keep it up. Loving the recipes. Like Terri says you guys are so "cookie" LOL! I'm keeping it simple these days...keeping on plan eats ready. That often means having things that can be quickly put together. Have a
Low clean up cost. Like I have been killing those low carb tacos kitkat and TamiG posted. I filled them with different stuff or make a " stuffed salad w with a side protein.Or just like that for a snack.

Ang - Thanks for the recipe. The base sounds excellent. The topping sounds a little eggy - I would wait til it was a little cooked to add the cheese to it

Just checking in. This month was NOT a good one for me. Health wise AND weight loss wise. BUT...next month is almost here and am hoping that will be a healthy, successful one for all of us.

I started January at 251.4
1. Had an upper-respiratory infection for 3 weeks.
2. Then had the vertigo episode and did NOT eat right for over a week.
3. Went out for my "delayed b-day lunch yesterday.

My weights for the last 3 days.

255.0

Considering the 255 is definitely due to the b-day at Grand China Buffet, I guess I've been pretty lucky. Can't wait for February to start. Hoping to be down at least a "little" more by then.

I did awesome yesterday. I had only one cup of coffee. I had no Atkins bars. I ate plenty of fat. I ended my night at my daily carb goal of 20g. a day. I only had one snack and that was some bacon. My highest carb meal was supper and that was due to a small salad and some zucchini. I know I don't post my meals, but it is inspiring to see others post theirs. It gives me ideas of what to eat. I did make me a LCHF chocolate mousse. It was a concoction I made up myself. It ended up being 4.5 c and it was rich and satisfying with all the fats in it. I'll get the recipe together and post it.
Terri~ Your right I've been on this thread almost two years now and I haven't seen it with this many pages either. It was funny when I logged in and it showed "last page" instead of a number. I guess with having more people and everyone having lots to say it adds up. If I'm not mistaken there was one month last year that it barely reached 4 pages.
Thanks for all the lovely recipes y'all!! They look awesome! It's hard to cook LC for just me. The rest of my family are sugar burners. They will eat some things LC like my breading for chicken tenders and such, but they want real pasta with their spaghetti sauce. lol One good thing about it is I'll have leftovers for lunch for the rest of the week.

1/22 - 239.6 I fasted yesterday, BPC, 3 eggs, 3 sausages, 2 oopsie breads and lots of water, that is it so not sure what happened unless it was from the 20th. It's okay I'm staying the course but it better be down tomorrow.
1/23 - 238 Happy for loss but I think I'm retaining fluid, hands feel swollen.
1/24 - 237.8 Got 5.5 miles of walking in yesterday
1/25 - 238.8 Got over 5 miles, over 12K steps.

To be honest I wasn't going to put my weight because I broke down with the hubby and had a donut, okay 2, yep can't believe I did that, those are my down fall. That's okay, I WILL behave today! Trying for another 5+ miles again today, boy is it wearing me out.

Tami I hear you about sweets, I guess that is our addiction. We can do this, we can beat those evil sweets.

Kit Yes, we will motivate each other until we are at 140, you may have to wait for me though.

sick_n_tired Your crust recipe sounds great BUT pork rinds, I'm struggling with those. When we first started lc, got my hubby some, I guess fresh ones, and what does he show me, hair, just don't know that I can do it.

Judy glad to see you back and hope you start feeling better real soon.

candiangirl you are doing great with your weight loss.

Let's do it, Ladyboss!

I'm happy with my weight loss so far and expected a lower bp reading at my annual work checkup where we get extra money for fitness stuff, BUT the bp was super high! I was so discouraged not to mention kind of scared, so I have a regular check up scheduled for next week.

Last night was a little tough. My sisters and I went out for Mexican and as much as I wanted what they were having I stuck with a salad with chicken, cheese, avocado, black olives, and used a little salsa as my dressing. It was actually really good and I'm seeing results on the scale today

Good morning all!

Bloodhound, that is scary about the BP....I will caution you though, make sure they're using the right cuff!!! Years ago DH had a doctors appointment and they said his BP was through the roof and IMMEDIATELY put him on BP medication. He HATED the medication, said it made him feel terribly sluggish and weak. He stopped taking it after a month and then went to another doc for a second opinion and they checked his BP and discovered his BP was perfectly fine....they showed him 2 different cuffs and asked which one was used previously....it was a normal size cuff....they said the problem was that his arms were larger than most (he was into body building then) and so even though the normal cuff "fit" it was really too small to get a proper reading. They told him to always to ask for the bigger cuff whenever his BP is checked....and I do too because unfortunately with all of this weight gain my arms are bigger.....neither of us have ever had another problem with BP readings. So.....just saying....when you get re-checked, maybe ask about the cuff....it might make a difference??

Canadiangirl, great job with the steady loss....that's how you keep it off long term!!

Teresa, I LOOOOVE donuts.... I have to avoid them like the plague though because I can scarf down 3 without blinking....it's awful!! Keep up the walking though and you'll see some great losses come your way!

Tami, Spaghetti is a staple around here too....and I can only do so much spaghetti squash. Another substitute that I do enjoy is Portobella mushrooms....I grab a nice big one, saute it in butter and garlic, then fill the middle with a meatball of sausage and a spoonful of the spaghetti sauce, then top it with lots of mozzarella and put it under the broiler....if I have fresh basil I'll garnish it with that and it is so darn tasty and filling......I don't even miss the pasta!!

Judy, I think given your month you've done remarkably well....i'm glad you're feeling better, you'll get on top of this in no time!!

Spride - Would you mind sharing how you make your stew? I love stew, but my recipe is loaded with potatoes.

I made a chicken, bacon chowder the other night that was really good. Recipe from Peace, Love and Low Carb.

Thanks, Ladyboss! I am hoping the issue was more with the cuff than with me. In the meantime, I'm going to limit salt and caffeine until my doctor's appointment next week.

My cholesterol was also up from last year to the point I'm now in the moderate risk group, so I'm going to start switching out some bacon fat for avacados

Hi all - Penny here. It's been awhile, but I am back. My way of eating is South Beach, and I have just completed my first week. 8 pounds down. Yay! I have just been diagnosed with a torn meniscus in my right knee. I suffered real pain all through December before finally getting an MRI. Went to Jewett Orthopaedic clinic and I now have a plan of treatment. I have started conservatively with 4 weeks of rehab to strengthen the muscles around the knee. It will not heal the tear, but I will be able to get around better. After that I will be re-evaluated to check progress. One thing I know that will help is to lose weight. I have tried for years and had good success, only to fall off and gain ALL the weight back. Sooooo I am starting over again.

Haha...Ewww....the hair? What brand pork rinds do y'all eat. I get Golden Flake. The hair would gross me out too. Yuck!! I've gotten a uncooked chicken from the store before that still had some feathers. It was a little unnerving, but at least you can pluck those.
